Prep Time: 15 minutes
Cook Time: 55 minutes
Ingredients
- 2/3 cup white sugar (scant)
- 1 large egg
- 1 large egg yolk
- 1 tsp vanilla extract
- 1/3 cup butter (melted)
- 1/2 cup all-purpose flour
- 1 tsp baking powder
- 6 Tbsp whole milk (room temperature)
- 6-7 fresh peaches (or canned, drained and sliced)
Instructions
- Prepare the Pan: Preheat your oven to 350°F (175°C). Grease an 8 or 9-inch round cake pan with butter or oil. Sprinkle the bottom with brown sugar, line it with parchment paper, and wrap the pan’s outside with aluminum foil to prevent leaks.
- Mix the Batter: In a mixing bowl, whisk together the sugar, egg, egg yolk, vanilla, and melted butter using a hand mixer. Continue whisking until the mixture turns light, foamy, and pale—about 3-4 minutes.
- Incorporate Dry Ingredients: Add the flour and baking powder to the egg mixture. Stir gently until combined.
- Add Milk and Peaches: Pour in the milk and fold in the peach chunks until evenly distributed.
- Bake: Pour the batter into the prepared pan. Bake for 55 minutes or until a toothpick inserted into the center comes out clean.
- Cool and Set: Allow the cake to cool completely. For best results, refrigerate it overnight before slicing to let the flavors meld and the texture set.
Notes:
- Fresh peaches provide the best flavor, but canned peaches work wonderfully if fresh ones are unavailable.
- Refrigerating overnight enhances the cake’s creamy texture and intensifies the peach flavor.
This simple and delicious cake is perfect for brunch, breakfast, or dessert. Enjoy a slice of summer sweetness! 🍑
