This delightful cake is loaded with juicy peach chunks and a sweet, creamy batter. It’s incredibly simple to make—perfect for beginners or anyone craving a quick and delicious dessert!

Ingredients

  • 2/3 cup white sugar (scant)
  • 1 large egg
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 1/3 cup butter (melted)
  • 1/2 cup all-purpose flour
  • 1 tsp baking powder
  • 6 Tbsp whole milk (room temperature)
  • 6-7 fresh peaches (or canned, drained and sliced)

Instructions

  1. Prepare the Pan: Preheat your oven to 350°F (175°C). Grease an 8 or 9-inch round cake pan with butter or oil. Sprinkle the bottom with brown sugar, line it with parchment paper, and wrap the pan’s outside with aluminum foil to prevent leaks.
  2. Mix the Batter: In a mixing bowl, whisk together the sugar, egg, egg yolk, vanilla, and melted butter using a hand mixer. Continue whisking until the mixture turns light, foamy, and pale—about 3-4 minutes.
  3. Incorporate Dry Ingredients: Add the flour and baking powder to the egg mixture. Stir gently until combined.
  4. Add Milk and Peaches: Pour in the milk and fold in the peach chunks until evenly distributed.
  5. Bake: Pour the batter into the prepared pan. Bake for 55 minutes or until a toothpick inserted into the center comes out clean.
  6. Cool and Set: Allow the cake to cool completely. For best results, refrigerate it overnight before slicing to let the flavors meld and the texture set.

Notes:

  • Fresh peaches provide the best flavor, but canned peaches work wonderfully if fresh ones are unavailable.
  • Refrigerating overnight enhances the cake’s creamy texture and intensifies the peach flavor.
