Ingredients

- 1 cup quinoa, rinsed and drained
- 2 cups water
- 1/2 teaspoon salt
- 1 cup dark chocolate chips (vegan)
- 1/2 cup natural peanut butter
- 1/4 cup maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup coconut oil, melted
- 1/2 teaspoon sea salt (for sprinkling)
Instructions
- Cook the quinoa by combining rinsed quinoa, water, and salt in a saucepan. Bring to a boil, then reduce heat and simmer for 15 minutes until water is absorbed. Fluff and cool.
- Melt dark chocolate chips in a microwave or double boiler and set aside to cool slightly.
- In a mixing bowl, combine cooled quinoa, peanut butter, maple syrup, vanilla extract, and melted coconut oil. Mix well.
- Line a muffin tin with paper liners and pour a small amount of melted chocolate into each liner.
- Add a spoonful of the quinoa-peanut butter mixture on top of the chocolate layer and press down gently.
- Pour more melted chocolate over the quinoa mixture to cover completely.
- Sprinkle a pinch of sea salt on top of each cup.
- Refrigerate for about 30 minutes until chocolate is set.
- Remove from liners and store in an airtight container in the fridge.
Notes
- These peanut butter cups can be stored in the fridge for up to a week.
- Feel free to experiment with different nut butters or sweeteners.
