Delicious and crunchy vegan peanut butter cups made with quinoa for a healthy twist.

Ingredients

Scale
  • 1 cup quinoa, rinsed and drained
  • 2 cups water
  • 1/2 teaspoon salt
  • 1 cup dark chocolate chips (vegan)
  • 1/2 cup natural peanut butter
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut oil, melted
  • 1/2 teaspoon sea salt (for sprinkling)

Instructions

  1. Cook the quinoa by combining rinsed quinoa, water, and salt in a saucepan. Bring to a boil, then reduce heat and simmer for 15 minutes until water is absorbed. Fluff and cool.
  2. Melt dark chocolate chips in a microwave or double boiler and set aside to cool slightly.
  3. In a mixing bowl, combine cooled quinoa, peanut butter, maple syrup, vanilla extract, and melted coconut oil. Mix well.
  4. Line a muffin tin with paper liners and pour a small amount of melted chocolate into each liner.
  5. Add a spoonful of the quinoa-peanut butter mixture on top of the chocolate layer and press down gently.
  6. Pour more melted chocolate over the quinoa mixture to cover completely.
  7. Sprinkle a pinch of sea salt on top of each cup.
  8. Refrigerate for about 30 minutes until chocolate is set.
  9. Remove from liners and store in an airtight container in the fridge.

Notes

  • These peanut butter cups can be stored in the fridge for up to a week.
  • Feel free to experiment with different nut butters or sweeteners.
