The Secret to Perfectly Crispy Roast Potatoes

Ingredients

  • 1 kg Yukon Gold or Russet potatoes, peeled and cut into 4 cm chunks
  • 3 tbsp olive oil or duck fat
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp dried rosemary (or fresh, chopped)
  • ½ tsp dried thyme
  • 1 tbsp cornstarch (for extra crispiness)

Instructions

1. Parboil the Potatoes

  • Bring a large pot of salted water to a boil.
  • Add the peeled and chopped potatoes and boil for 10–12 minutes until fork-tender but not falling apart.
  • Drain and let them sit for 5 minutes to steam dry—this is key for extra crispiness.

2. Rough Up the Potatoes

  • Return the drained potatoes to the pot.
  • Add 1 tbsp olive oil and 1 tbsp cornstarch.
  • Shake the pot vigorously to roughen the edges—this creates the signature crunch.

3. Roast the Potatoes

  • Preheat oven to 220°C (425°F).
  • Spread the potatoes on a baking sheet without overcrowding.
  • Drizzle with the remaining oil and sprinkle with salt, black pepper, garlic powder, smoked paprika, rosemary, and thyme.
  • Toss to coat evenly.
  • Roast for 40–45 minutes, flipping halfway, until golden and crispy.

4. Serve & Enjoy

  • Let the potatoes cool slightly before serving.
  • Garnish with fresh parsley or a sprinkle of sea salt.
  • Perfect alongside roasted meats, vegetables, or your favorite dipping sauce.
