Many traditional recipes can yield inconsistent results—some cookies turn out dry, others too thin. The secret? Gradually adding the last cup of flour ensures the dough reaches the perfect consistency.

Molasses acts as a natural binder, eliminating the need for eggs and keeping the dough stable. Rolling the dough out before chilling makes it much easier to handle and cut into shapes, unlike a firm, chilled dough ball.

How to Make Gingerbread Cookies

Step 1: Cream Butter & Sugar
Mix butter with both brown and granulated sugar until light and fluffy. This step incorporates air pockets for even baking.

Step 2: Add Molasses
Use standard molasses for a rich, classic flavor. Grandma’s brand works beautifully.

Step 3: Mix Dry Ingredients (First Batch)

Step 4: Add Remaining Flour Gradually
Slowly add the final cup of flour while mixing. The dough should feel soft yet firm—like play-doh. Too crumbly? You added too much flour.

Rolling & Chilling the Dough

Roll the dough out to ¼ inch thickness on lightly floured parchment paper. Chill for 30 minutes—just enough time to prepare icing if you want to decorate.

Baking Gingerbread Cookies

Cut cookies into shapes and place them on a parchment-lined baking sheet. They don’t spread much, so you can fit several on one tray. Bake until cookies are puffed, evenly colored, and slightly dull on top. Avoid waiting until the edges darken—they’ll overbake.

No Baking Powder or Soda Needed: These cookies achieve a thick, chewy texture naturally, without any leavening agents.
