Ingredients
- 6 oz. (3/4 cup) butter, softened to room temperature
- 3.5 oz. (1/2 cup) superfine sugar
- 9 oz. (2 1/4 cups) all-purpose flour
- 1/2 cup raw or large-granulated sugar (for coating)

Instructions
- Cream Butter and Sugar: Beat the butter and sugar together using a mixer until the mixture becomes light and fluffy.
- Form the Dough: Sift the flour into the creamed mixture and knead until a dough forms.
- Shape the Dough: Transfer the dough to a flat surface and shape it into a long rectangular prism using your hands.
- Coat in Sugar: Roll the dough in raw or large-granulated sugar to coat. Wrap the dough in cling film and refrigerate for 1 hour.
- Cut and Bake: After chilling, slice the dough into squares and place them on a parchment-lined baking sheet. Bake at 325°F for 20 minutes or until lightly golden.
Notes
- Softening Butter: If your butter isn’t at room temperature, cut it into small pieces and lightly soften it in the microwave to speed up the process.
- Homemade Superfine Sugar: Don’t have superfine sugar? Simply pulse regular granulated sugar in a blender or food processor until fine.
- Baking Tip: These cookies don’t expand much during baking, so you can space them fairly close together on the baking sheet.
