How to Make Strawberry Cream Cheese Muffins
Making these muffins is simple and quick. With just a handful of ingredients, you’ll create delicious homemade muffins better than anything from a bakery.
- Streusel Topping: Whisk together flour, brown sugar, and salt. Add melted butter and stir with a fork until coarse crumbs form. Set aside.
- Muffin Batter: Combine dry ingredients (flour, baking powder, salt) in one bowl, and whisk the wet ingredients (egg, sugar, oil, vanilla, and Greek yogurt) in another. Mix them together, and then fold in diced strawberries, reserving some to add on top of the muffins.
- Cream Cheese Filling: Mix softened cream cheese, sugar, corn starch, and vanilla until smooth.
- Assemble the Muffins: Add a tablespoon of muffin batter to each muffin cup. Drop a spoonful of the cream cheese mixture in the center and top with more muffin batter, filling the cups about two-thirds full. Generously sprinkle the streusel topping over the muffins and add a few extra strawberries on top.
- Bake: Bake at 350°F for 22-25 minutes or until the muffins are golden brown and cooked through. Let them cool for a few minutes before transferring them to a rack.
- Glaze: For extra sweetness, drizzle a simple glaze made from powdered sugar and milk or cream over the cooled muffins.
