Strawberry Cheesecake Cinnabon Rolls

A luscious twist on classic cinnamon rolls, these Strawberry Cheesecake Cinnabon Rolls feature pillowy soft dough, a creamy cheesecake filling, cinnamon sugar, and juicy fresh strawberries — all topped with a smooth cream cheese glaze. 🍞 Ingredients

For the Dough:

  • 2 cups (240g) all-purpose flour
  • ½ cup (120ml) warm whole milk
  • 2¼ tsp (7g) active dry yeast
  • ¼ cup (50g) granulated sugar
  • ¼ cup (60g) unsalted butter, softened
  • 1 large egg
  • ½ tsp vanilla extract
  • ½ tsp salt

For the Cheesecake Filling:

  • 8 oz (225g) cream cheese, softened
  • ¼ cup (50g) sugar
  • 1 tsp vanilla extract
  • 1 tbsp flour
  • ½ cup (120ml) sour cream or Greek yogurt

For the Cinnamon Sugar:

  • ½ cup (100g) brown sugar
  • 2 tbsp cinnamon
  • ¼ tsp salt
  • ¼ cup (60g) butter, softened

Strawberry Topping:

  • 1 cup (150g) sliced fresh strawberries
  • 1 tbsp sugar (optional)

Cream Cheese Icing:

  • 4 oz (115g) cream cheese, softened
  • ½ cup (60g) powdered sugar
  • ¼ tsp vanilla
  • 1–2 tbsp milk
  • Pinch of salt

🧑‍🍳 Instructions

Step 1: Make the Dough

  1. Activate Yeast: Mix yeast with warm milk. Let sit 5–10 min until frothy.
  2. Mix Dough: Combine flour, sugar, salt, butter, egg, and vanilla with yeast mixture.
  3. Knead: Knead until smooth and elastic (8–10 min).
  4. First Rise: Cover and let rise in a warm place for 1–1.5 hours, until doubled.

Step 2: Make Cheesecake Filling

Beat cream cheese until smooth. Add sugar, vanilla, flour, and sour cream. Mix until creamy. Set aside.

Step 3: Make Cinnamon Sugar

Mix brown sugar, cinnamon, and salt in a bowl. Soften butter for spreading.

Step 4: Assemble Rolls

  1. Roll Out Dough: On a floured surface, roll dough into a 16×12-inch rectangle.
  2. Spread Fillings: Spread butter, then cheesecake filling, then sprinkle cinnamon sugar.
  3. Roll & Slice: Roll up tightly and slice into 12 rolls. Place in greased 9×13-inch pan.
  4. Second Rise: Cover and let rise for 30–45 min, until puffy.

Step 5: Bake

Preheat oven to 350°F (175°C). Bake rolls for 25–30 min until golden. Let cool slightly.

Step 6: Make Icing

Whip together icing ingredients, adding milk as needed to reach a pourable consistency.

Step 7: Add Toppings

Top warm rolls with icing, then garnish with sugared strawberries.
