You guys — we had a breakthrough. My 13-year-old daughter, who’s not exactly a fan of vegetables, devoured this cheese-stuffed chicken breast. I didn’t exactly hide the spinach… it was clearly there, mixed in with the creamy filling. But she ate it. All of it. Even with a side of Brussels sprouts!

That’s how I knew this baked stuffed chicken breast was something special. It’s flavorful, juicy, easy to make, and just happens to be low carb and keto-friendly too.

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive or avocado oil
  • 1 tsp paprika
  • 1 tsp salt, divided
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • 4 oz cream cheese, softened
  • ¼ cup grated Parmesan
  • 2 tbsp mayonnaise
  • 1½ cups fresh spinach, chopped
  • 1 tsp minced garlic
  • ½ tsp red pepper flakes (optional but adds a kick!)

How to Make Spinach Stuffed Chicken:

  1. Prep the Oven & Chicken:
    Preheat your oven to 375°F. Place chicken breasts on a cutting board and drizzle with oil.
  2. Season the Chicken:
    Mix paprika, ½ tsp salt, garlic powder, and onion powder. Rub the spice blend over both sides of the chicken.
  3. Slice Pockets:
    Carefully cut a deep pocket into the side of each chicken breast using a sharp knife. Don’t cut all the way through.
  4. Make the Filling:
    In a small bowl, stir together cream cheese, Parmesan, mayo, spinach, garlic, red pepper flakes, and the remaining ½ tsp salt.
  5. Stuff the Chicken:
    Spoon the creamy spinach mixture evenly into each chicken pocket.
  6. Bake:
    Arrange the stuffed chicken breasts in a 9×13-inch baking dish. Bake uncovered for 25–30 minutes, or until cooked through.
