Soft Peanut Butter Cookie Recipe

These Soft Peanut Butter Cookies are a delightful treat that the whole family will enjoy! With a chewy texture and rich peanut butter flavor, they’re easy to make and perfect for any occasion. Serve them warm with an ice-cold glass of milk or a scoop of vanilla ice cream for a comforting dessert experience.

This recipe makes 18 cookies, but if you’re serving a larger crowd, you can easily double or triple the recipe to satisfy everyone’s sweet tooth!

Ingredients:

  • ½ cup peanut butter (smooth or chunky)
  • ½ cup butter (softened)
  • ⅓ cup brown sugar (light or dark)
  • ⅓ cup white sugar
  • 1 ¼ cups all-purpose flour
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon vanilla extract
  • 1 egg

Instructions:

  1. Cream the wet ingredients: In the bowl of a stand mixer (or with a hand mixer), beat together the brown sugar, white sugar, peanut butter, and softened butter until smooth. Add the egg and vanilla extract and mix until well incorporated.
  2. Combine dry ingredients: In a separate bowl, mix the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until fully combined.
  3. Chill the dough: Transfer the dough to a bowl, cover it, and place it in the fridge for at least 1 hour. Chilling helps the cookies hold their shape during baking.
  4. Preheat the oven: Preheat your oven to 375°F (190°C).
  5. Shape the cookies: Line a baking sheet with parchment paper or a silicone baking mat. Roll about 1 ½ tablespoons of dough into a ball and place it on the prepared baking sheet. Gently press each dough ball with the back of a fork to create a crisscross pattern.
  6. Bake: Bake the cookies for 9-11 minutes, or until the edges are golden brown.
  7. Cool: Let the cookies cool on the baking sheet for a few minutes before transferring them to a cooling rack to cool completely.

Tips for Success:

  • Chill the dough: Chilling the dough helps the cookies maintain their shape and prevents them from spreading too much while baking.
  • Customize your cookie size: For larger cookies, use more dough per ball, but remember to adjust the baking time accordingly.
  • Storage: Store cooled cookies in an airtight container on the counter for up to a week. For longer storage, freeze the dough for up to 3 months.
