  • 12 mini tortillas (flour or corn)

  • 1 cucumber, diced
  • 1 tbsp rice vinegar
  • 1/2 tsp salt

To Serve:

  • Dumpling dipping sauce
  • Chili oil
  • Sesame seeds
  • Extra scallions and cilantro

How to Make Smash Dumpling Tacos

  1. Prepare the Dumpling Filling
    In a large bowl, mix the ground pork, scallions, cilantro, garlic, ginger, soy sauce, sesame oil, fish sauce, black vinegar, and black pepper until well combined.
  2. Make the Quick Pickled Cucumber
    Toss the diced cucumber with rice vinegar and salt. Let it sit while you prepare the tacos.
  3. Assemble the Tacos
    Spread a heaping tablespoon of dumpling mixture onto each mini tortilla, pressing it into a thin, even layer.
  4. Cook the Tacos
    Heat a drizzle of olive oil in a large pan over medium-high heat. Place tortillas, filling-side down, into the pan. Use a spatula to press down firmly. Cook for 4 minutes, then flip and cook for 1 more minute to crisp up the tortilla.
  5. Garnish and Serve
