Ingredients
For the Meat Filling:
- 1 lb. Ground turkey (or substitute with beef)
- 2 cloves Garlic (chopped or grated)
- 1 cup Baby carrots (diced)
- 1 tsp Salt
- ½ tsp Black pepper
- 1 Onion (finely chopped)
- ¼ cup Flour
- 2 tbsp Tomato paste
- ½ cup Frozen peas
- ½ cup Frozen corn
- ¼ tsp Dried oregano
- ¼ tsp Dried thyme
- 2½ cups Beef broth (low sodium)
- 2 tsp Worcestershire sauce
For the Potatoes:
- 8 Russet potatoes (baked)
- 2 cups Cheddar cheese (shredded)

Instructions
1. Bake the Potatoes
- Preheat your oven to 425°F (220°C).
- Wash and poke the potatoes with a fork, then wrap them in foil.
- Bake for 1 hour until tender.
2. Prepare the Shepherd’s Pie Filling
- While the potatoes bake, heat a skillet over medium heat. Add the ground turkey, onion, garlic, carrots, salt, and pepper.
- Cook until the meat is browned and the carrots are tender. Break up the meat with a spatula as it cooks. Drain any excess fat.
- Stir in the flour and cook for an additional 1 minute.
- Add tomato paste, oregano, thyme, beef broth, and Worcestershire sauce. Simmer over medium heat for 20–25 minutes until the mixture thickens.
- Stir in the frozen peas and corn, cooking for an additional 5 minutes on low heat.
3. Assemble the Shepherd’s Pie Potatoes
- Once the potatoes are baked, carefully cut off the tops and scoop out the centers to create a bowl.
- Spoon the meat filling into the hollowed potatoes, pressing it down gently.
- Top each potato with shredded cheddar cheese.
