Roasted Jalapeño Popper Grilled Cheese

December 3, 2025 by el hassan Leave a Comment

Take your love of jalapeño poppers and turn it into a sandwich! This Roasted Jalapeño Popper Grilled Cheese combines a creamy, flavorful cream cheese filling with crispy bacon and melted cheddar, all sandwiched between thick slices of buttery Texas Toast. It’s smoky, spicy, cheesy, and downright irresistible.

If you’re a fan of jalapeño poppers, check out my other favorites like Bacon Jalapeño Poppers, jalapeño popper wontons, quesadillas, and stuffed mushrooms!

Ingredients You’ll Need

  • Jalapeños: Roasted to bring out a mild smokiness and fold perfectly into the creamy filling.
  • Cream Cheese: Smooth and flavorful base for the filling.
  • Bacon: Crispy strips add the perfect crunch and savory balance.
  • Cheddar Cheese: Melts beautifully, adding rich flavor and gooey texture.
  • Bread: Texas Toast is ideal for its thickness and buttery finish, but any bread you love works.
  • Seasonings: Garlic salt, onion powder, and black pepper give the filling a punch.
  • Butter: For grilling the sandwich to golden perfection.

How to Make It

  1. Roast the Jalapeños:
Preheat oven to 425°F. Brush sliced and seeded jalapeños with olive oil and roast for about 15 minutes, until slightly charred. Let cool, then chop roughly.
  2. Make the Cream Cheese Filling:
In a bowl, mix cream cheese with garlic salt, onion powder, and black pepper. Fold in the roasted jalapeños.
  3. Assemble the Sandwiches:
Butter one side of a bread slice. Spread cream cheese mixture on the other side, then top with 3 slices of cooked bacon and ½ cup shredded cheddar. Place another slice of bread on top, buttered side out. Repeat for the second sandwich.
  4. Grill to Perfection:
Heat a skillet over medium heat. Cook sandwiches 3–5 minutes per side until bread is golden and cheese is melted. Serve immediately for gooey, spicy, cheesy goodness.

Tips & Variations

  • Roasting Jalapeños: Optional, but highly recommended for a smoky depth of flavor.
  • Air Fryer Option: Roast peppers at 425°F for 7 minutes. Air fry assembled sandwiches at 350°F for 5 minutes per side.
  • Bread Options: Thick slices like Texas Toast are ideal, but any bread works—adjust cooking time if thinner.

Why You’ll Love This Recipe

  • Combines the best of jalapeño poppers and grilled cheese in one.
  • Creamy, cheesy, smoky, and savory all at once.
  • Easy to make at home with simple ingredients.
  • Perfect for lunch, dinner, or a fun snack!
