Made with creamy cottage cheese, this dessert is indulgent yet packed with protein — perfect for satisfying your sweet tooth without the guilt. Ingredients

Coffee Mixture

  • 1½ cups strong brewed coffee
  • ½ teaspoon vanilla extract
  • 2 tablespoons sugar

Cottage Cheese Base

  • 16 oz low-fat cottage cheese (2%)
  • 1 teaspoon vanilla extract
  • 4 tablespoons sugar

Egg Yolk Mixture

  • 2 large egg yolks
  • 2 tablespoons sugar

Assembly

  • Ladyfinger cookies (about 24–30, depending on size)
  • Unsweetened cocoa powder (for dusting)
  • 2 cups cold heavy cream (for best whipping results)

Instructions

Step 1: Prepare the Coffee Mixture

In a bowl, combine strong black coffee or espresso, sugar, and vanilla extract. Stir until the sugar dissolves completely. Pour into a shallow dish and set aside to cool.

Step 2: Process the Cottage Cheese

Place the cottage cheese in a food processor and blend until smooth, scraping down the sides as needed. Add sugar and vanilla extract and blend again until fully incorporated. Chill the creamy mixture in the fridge while preparing the remaining ingredients.

Step 3: Set Up a Double Boiler

Place a heatproof bowl over a saucepan with simmering water, ensuring the bowl doesn’t touch the water. This will gently cook the egg yolks without scrambling them.

Step 4: Cook the Egg Yolk Mixture

In the double boiler, whisk together egg yolks and sugar. Keep whisking constantly for about 10 minutes until the mixture is pale, thick, and smooth. Remove from heat and continue whisking for a few minutes to cool slightly.

Step 5: Combine Egg Yolks with Cottage Cheese

Add the cooled egg yolk mixture to the chilled cottage cheese in the food processor. Blend until completely smooth and creamy.

Step 6: Whip the Cream

In a chilled bowl, whip the cold heavy cream until soft peaks form. Gently fold the whipped cream into the cottage cheese mixture until fully incorporated, creating a light and airy filling.

Step 7: Assemble the Tiramisu

  1. Quickly dip each ladyfinger in the cooled coffee mixture and layer them in a serving dish.
  2. Spread half of the cottage cheese filling over the ladyfingers.
  3. Repeat with another layer of dipped ladyfingers and the remaining filling.
  4. Dust the top generously with cocoa powder.

Step 8: Chill & Serve

Refrigerate for at least 2–3 hours (or overnight) to allow the flavors to meld and the dessert to set. Serve chilled and enjoy a creamy, protein-packed twist on classic tiramisu!
