Ingredients
- 1 pound breakfast sausage (Jimmy Dean regular or hot for a spicy kick)
- 6 green onions (white and green parts separated)
- 1 red bell pepper, chopped (or any color you prefer)
- 10 large eggs, room temperature
- 1 1/4 cups heavy cream
- 1 tablespoon Dijon mustard
- 1-2 teaspoons Tabasco sauce (optional, for a spicy touch)
- 1 1/2 teaspoons salt
- 1 teaspoon black pepper
- 3 cups sharp cheddar cheese, shredded and divided
- 1 (30-ounce) package frozen shredded hash browns, thawed

Instructions
- Preheat Oven: Set your oven to 350°F. Lightly grease a 9×13-inch baking dish with nonstick spray.
- Cook the Sausage and Veggies:
- In a large skillet over medium-high heat, cook the sausage, breaking it into small pieces.
- Add the chopped red bell pepper and the white/light green parts of the green onions. Sauté everything until the sausage is no longer pink (about 6-8 minutes). Remove from heat and let cool slightly.
- Prepare the Egg Mixture:
- In a large bowl, whisk together the eggs, heavy cream, Dijon mustard, Tabasco (if using), salt, pepper, and half of the reserved green onion tops.
- Stir in 1 ½ cups of shredded cheese, the hash browns, and the cooled sausage mixture.
- Assemble the Casserole:
- Pour the mixture into the prepared baking dish, spreading it evenly. Cover with foil.
- Bake:
- Bake for 50 minutes. Remove the foil, sprinkle the remaining 1 ½ cups of cheese on top, and increase the oven temperature to 400°F.
