Pioneer Woman Breakfast Casserole Recipe

This classic breakfast casserole is inspired by Ree Drummond’s original recipe, and it’s truly a crowd-pleaser. I’ve been making it for years, and it never fails to bring my family together—especially when everyone’s home for the holidays or a special weekend. Packed with sausage, hash browns, and plenty of cheese, it’s the ultimate comfort food that’s perfect for early risers and late sleepers alike.

One of the best parts? You can prepare it the night before, making mornings stress-free. Whether you serve it fresh out of the oven or reheat it for brunch, this dish is guaranteed to satisfy everyone.


Ingredients

  • 1 pound breakfast sausage (Jimmy Dean regular or hot for a spicy kick)
  • 6 green onions (white and green parts separated)
  • 1 red bell pepper, chopped (or any color you prefer)
  • 10 large eggs, room temperature
  • 1 1/4 cups heavy cream
  • 1 tablespoon Dijon mustard
  • 1-2 teaspoons Tabasco sauce (optional, for a spicy touch)
  • 1 1/2 teaspoons salt
  • 1 teaspoon black pepper
  • 3 cups sharp cheddar cheese, shredded and divided
  • 1 (30-ounce) package frozen shredded hash browns, thawed

Instructions

  1. Preheat Oven: Set your oven to 350°F. Lightly grease a 9×13-inch baking dish with nonstick spray.
  2. Cook the Sausage and Veggies:
    • In a large skillet over medium-high heat, cook the sausage, breaking it into small pieces.
    • Add the chopped red bell pepper and the white/light green parts of the green onions. Sauté everything until the sausage is no longer pink (about 6-8 minutes). Remove from heat and let cool slightly.
  3. Prepare the Egg Mixture:
    • In a large bowl, whisk together the eggs, heavy cream, Dijon mustard, Tabasco (if using), salt, pepper, and half of the reserved green onion tops.
    • Stir in 1 ½ cups of shredded cheese, the hash browns, and the cooled sausage mixture.
  4. Assemble the Casserole:
    • Pour the mixture into the prepared baking dish, spreading it evenly. Cover with foil.
  5. Bake:
    • Bake for 50 minutes. Remove the foil, sprinkle the remaining 1 ½ cups of cheese on top, and increase the oven temperature to 400°F.
    • Continue baking for 10-15 minutes, or until the center is set and the top is golden.
  6. Serve: Let the casserole rest for
