Ingredients

  • 7 boiled eggs, peeled
  • ¼ cup mayonnaise (see substitutions below)
  • 1 ½ teaspoons sweet pickle relish
  • 1 heaping teaspoon yellow mustard

  • ¼ teaspoon pepper (or to taste)

Instructions

  1. Boil the Eggs:

    • Drain and fill the pot with ice water. Let the eggs cool for at least 15 minutes.
  2. Prepare the Filling:

    • Remove the yolks and place them in a food processor or mixing bowl, along with one whole egg.
    • Blend or mash with a fork until crumbly.
  3. Mix the Filling:
    • Add mayonnaise, pickle relish, mustard, salt, and pepper.
    • Blend or stir until the mixture is smooth and creamy. Adjust seasoning to taste.
  4. Assemble the Deviled Eggs:
    • Spoon or pipe the filling evenly into the egg whites.
    • Garnish with paprika, chives, and sliced gherkins, if desired.
  5. Serve and Enjoy:
    • Serve immediately or refrigerate in an airtight container until ready to enjoy.

  • Storage:
    Refrigerate in an airtight container for up to 2 days. Freezing is not recommended as the texture will change.
  • No Mayonnaise Option:
    Substitute with Greek yogurt, sour cream, or a mix of both for a lighter version.
