Ingredients:

  • 2 (10 oz) packages of frozen chopped broccoli, cooked and drained
  • ½ cup mayonnaise
  • ½ cup sour cream
  • 1 ½ cups grated sharp cheddar cheese, divided
  • 1 can (10 ¾ oz) condensed cream of mushroom soup
  • 2 large eggs, beaten
  • ¼ tsp garlic powder
  • Salt and pepper to taste
  • 1 cup crackers, crushed

Instructions:

  1. Preheat Oven: Set your oven to 350°F and grease a casserole dish with non-stick cooking spray.
  2. Mix the Base: In a large mixing bowl, combine the cooked broccoli, mayonnaise, sour cream, 1 cup of grated sharp cheddar cheese, condensed cream of mushroom soup, beaten eggs, garlic powder, salt, and pepper. Stir until fully combined.
  3. Assemble the Casserole: Pour the broccoli mixture into the prepared casserole dish. Spread it evenly. Sprinkle the remaining ½ cup of grated cheddar cheese over the top, followed by the crushed crackers for a crispy finish.
  4. Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10 minutes, or until the top is golden and bubbly.
  5. Serve: Allow the casserole to cool for a few minutes before serving. Serve it warm and enjoy the cheesy, crunchy goodness!

Notes:

  • Customization: You can substitute cream of chicken or cream of celery soup for a different flavor.
  • Fresh Broccoli: If using fresh broccoli, blanch it first to soften slightly before mixing.
  • Crackers: Ritz crackers work beautifully for the topping, but any buttery crackers will do.
