If you’re anything like me, pasta night never gets old — and when I saw boxes of pasta on sale last week (four for $3… yes, please!), inspiration struck. I also grabbed a pound of kielbasa on sale for $2, because it’s always fun to switch things up from the usual chicken or ground beef routine.

If you don’t cook with smoked kielbasa or sausage very often, get ready — it’s such a great ingredient for easy meals. There are countless ways to use it, and this one-pan recipe is proof that simple can still be delicious.

This One Pot Kielbasa Pasta is one of those meals you throw together and suddenly dinner is done. Everything cooks in one skillet, the flavors are cozy and satisfying, and it feeds a hungry crew without breaking the budget. If you’re short on time, have teens with bottomless appetites, or just want something easy that tastes good — this one’s a keeper.

One Pot Kielbasa Pasta

Ingredients

  • 1 tbsp olive oil
  • 1 lb smoked kielbasa or turkey/chicken sausage, sliced ¼ inch thick
  • 1.5 cups diced onion
  • 2 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 (10 oz) can diced tomatoes
  • 8 oz small dry pasta
  • ½ cup milk or heavy cream
  • ½ tsp each salt and pepper
  • 1 cup shredded Cheddar cheese
  • ⅓ cup thinly sliced scallions, for garnish

Instructions

  1. Heat olive oil in a 4–5 quart sauté pan over medium-high heat.
  2. Add the sliced kielbasa and onions and cook until browned.
  3. Stir in garlic and cook for about 30 seconds until fragrant.
  4. Add chicken broth, tomatoes, cream, pasta, salt, and pepper.
  5. Bring to a simmer and cook for about 15 minutes, or until pasta is tender.
  6. Remove from heat and stir in ½ cup cheese.
  7. Sprinkle remaining cheese over the top, cover, and let it melt until bubbly and lightly browned.
  8. Garnish with scallions and serve immediately.
