⏱ Recipe Overview

  • Prep Time: 15 minutes
  • Cook Time: 40 minutes
  • Total Time: 1 hour
  • Servings: 4

🥔 Ingredients

For the Chicken

  • 1 ½ lbs chicken breasts (3–4 pieces, about 1-inch thick)
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • ⅓ cup grated parmesan
  • ⅓ cup breadcrumbs (Italian or plain with 1 tsp Italian seasoning)
  • ½ tsp cracked pepper
  • ½–¾ tsp sea salt

For the Potatoes

  • 2 lbs red potatoes, cut into bite-sized pieces
  • 1–2 garlic cloves, minced
  • 2 tbsp olive oil
  • 2 tbsp grated parmesan
  • Salt and pepper, to taste

For the Green Beans

  • 1 lb fresh green beans, ends trimmed
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • 1 tbsp parmesan (optional)
  • Salt and pepper, to taste

🔪 Instructions

1. Preheat the Oven

Heat oven to 425°F (220°C). Line a sheet pan with parchment paper or lightly spray with cooking oil.

2. Roast the Potatoes

  1. In a bowl, toss potatoes with olive oil, garlic, parmesan, salt, and pepper.
  2. Spread onto one-third of the sheet pan in a single layer.
  3. Roast 10–15 minutes, depending on desired crispiness.

3. Prepare the Chicken

While the potatoes start baking, mix chicken breasts with olive oil, garlic, parmesan, breadcrumbs, pepper, and salt until coated evenly.

4. Add the Chicken to the Pan

Remove the potatoes from the oven and add the chicken breasts to the open section of the sheet pan.

5. Prep the Green Beans

Using the same bowl (no washing needed!), toss green beans with olive oil, garlic, parmesan, salt, and pepper.
Arrange them on the remaining space on the sheet pan.

6. Bake

Return the pan to the oven and bake for 25 minutes, or until:

  • Chicken reaches 165°F (74°C)
  • Potatoes are crispy
  • Green beans are tender

For extra-crispy potatoes, broil the last 4–5 minutes.

7. Serve

Let the pan cool for a few minutes, then plate and enjoy this easy, flavorful one-pan dinner!

💡 Recipe Tips

  • Chicken Thickness: Thick breasts may require additional cooking time—always check doneness with a thermometer.
  • Season to taste: Add extra Italian seasoning, smoked paprika, or garlic powder.
  • Extra Crispy Potatoes: Broil briefly at the end.
  • Crispier Chicken: Bake chicken on a wire rack over the pan to allow air circulation.
