Old-Fashioned Boston Brown Bread

Ingredients:

  • 1 cup whole wheat flour
  • 1 cup cornmeal
  • 1 cup rye flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/2 cup molasses
  • 1 1/2 cups buttermilk
  • 1 cup raisins

Directions:

  1. Preheat and Prepare the Pan:
    Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan or two 1-pound coffee cans. Set aside.
  2. Mix Dry Ingredients:
    In a large mixing bowl, whisk together the whole wheat flour, cornmeal, rye flour, baking soda, salt, cinnamon, and allspice.
  3. Combine Wet Ingredients:
    Add the molasses and buttermilk to the dry ingredients. Mix until just combined, being careful not to overmix.
  4. Add Raisins:
    Fold in the raisins to evenly distribute them throughout the batter.
  5. Transfer to Pan:
    Pour the batter into the prepared loaf pan or divide it evenly between the coffee cans. Smooth the top.
  6. Cover and Prepare Water Bath:
    Cover the pan or cans tightly with aluminum foil. Place them into a large roasting pan and pour boiling water into the roasting pan until it reaches halfway up the sides of the pan or cans.
  7. Bake:
    Bake in the preheated oven for 60–70 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool and Serve:
    Carefully remove the loaf pan or coffee cans from the water bath. Allow the bread to cool completely before slicing and serving.
