Indulge in the rich, buttery goodness of this homemade nut fudge! With a perfectly smooth texture and a hint of crunch from chopped nuts, this classic treat is perfect for special occasions or just because. 🍬✨

Ingredients

  • 6 cups granulated sugar, divided
  • 2 cups heavy cream
  • ½ cup unsalted butter
  • ½ teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1½ cups chopped walnuts or pecans

Instructions

1️⃣ Prepare the Dish: Grease a 9×13-inch baking dish and set it aside.

2️⃣ Caramelize the Sugar: In a small, heavy-bottomed saucepan, add 2 cups of sugar and heat over medium, stirring frequently. Cook until the sugar fully melts and turns a golden color—this should take about 20 minutes.

3️⃣ Combine Remaining Ingredients: In a large saucepan or Dutch oven, add the remaining 4 cups of sugar and heavy cream. Simmer over medium heat until the sugar dissolves completely.

4️⃣ Incorporate the Caramelized Sugar: Slowly pour the melted sugar from the small saucepan into the larger pot, stirring constantly.

5️⃣ Cook to Soft-Ball Stage: Increase the heat slightly and cook the mixture until it reaches 244°F (soft-ball stage) on a candy thermometer.

6️⃣ Add Flavor: Remove from heat and quickly stir in baking soda, followed by butter and vanilla extract. Stir until smooth.

7️⃣ Let It Rest: Allow the mixture to cool for 20 minutes before proceeding.

8️⃣ Add the Nuts & Finish: Stir in chopped walnuts or pecans until the mixture loses its glossy sheen. Pour into the prepared baking dish and spread evenly.

9️⃣ Set & Serve: Let the fudge cool completely for 1–2 hours (or overnight). Once set, cut into squares and enjoy!
