This Mediterranean Chicken Zucchini Bake is a light, nutritious, and easy one-dish meal perfect for weeknight dinners or meal prep. Tender chicken, fresh zucchini, cherry tomatoes, and aromatic Mediterranean herbs come together under a golden layer of melted cheese for a dish that’s both satisfying and flavorful. It’s gluten-free, low-carb, and ready in just 40 minutes!

Ingredients

For the Chicken & Vegetables:

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 medium zucchinis, sliced into half-moons
  • 1 cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil

Mediterranean Seasoning:

  • 1 teaspoon dried oregano
  • ½ teaspoon dried basil
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon red pepper flakes (optional)

Topping:

  • ½ cup shredded mozzarella (or feta for a Mediterranean twist)
  • ¼ cup grated Parmesan
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat & Prepare: Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Season Chicken & Veggies: In a large bowl, toss chicken, zucchini, cherry tomatoes, red onion, and garlic with olive oil and seasoning until evenly coated.
  3. Assemble the Bake: Spread mixture evenly in the prepared baking dish. Sprinkle mozzarella and Parmesan on top.
  4. Bake: Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 10–15 minutes until cheese is golden and chicken reaches 165°F (75°C).
  5. Serve: Garnish with fresh parsley. Pair with rice, quinoa, or a fresh salad.
