Mashed Potato Cups

These Mashed Potato Cups are a delightful twist on traditional mashed potatoes. Creamy on the inside with a crispy, golden top, they’re perfect as a side dish, appetizer, or party snack. Easy to make and packed with cheesy, garlicky flavor, these individual servings are a crowd-pleaser for any occasion!

Ingredients

  • 3 large russet potatoes, peeled and cubed
  • 4 cloves garlic, minced
  • 1/4 cup unsalted butter
  • 1/2 cup whole milk, warmed
  • 1 cup grated Parmesan cheese
  • 1 large egg, lightly beaten
  • Salt and pepper, to taste
  • Cooking spray or butter, for greasing
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Potatoes
    • In a large pot, add peeled and cubed potatoes, cover with cold water, and add a pinch of salt.
    • Boil over medium-high heat for 15-20 minutes, or until fork-tender.
    • Drain the potatoes and return them to the pot.
  2. Prepare the Garlic Butter
    • In a small pan, melt the butter over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant. Remove from heat.
  3. Mash the Potatoes
    • Mash the cooked potatoes until smooth. Gradually stir in warm milk, garlic butter, and Parmesan cheese.
    • Season the mashed potatoes with salt and pepper to taste.
  4. Incorporate the Egg
    • Lightly beat the egg, then slowly stir it into the mashed potatoes, mixing well.
  5. Prepare the Muffin Tin
    • Preheat your oven to 400°F (200°C).
    • Grease a 12-cup muffin tin with cooking spray or butter.
  6. Fill and Bake
    • Spoon the mashed potato mixture into the muffin cups, filling them evenly.
    • Sprinkle additional Parmesan cheese on top of each cup.
    • Bake for 20-25 minutes, or until the tops are golden and slightly crispy.
  7. Serve
    • Allow the potato cups to cool slightly before carefully removing them from the tin.
    • Garnish with fresh parsley and serve warm.

Notes

  • For extra flavor, replace half of the Parmesan with shredded cheddar cheese.
  • If you prefer a creamier texture, add an extra splash of warm milk while mashing the potatoes.
  • Leftover mashed potato cups can be reheated in the oven at 350°F (175°C) for 10 minutes.
