Instructions

  1. Cook the Chicken: Heat olive oil in a large Dutch oven or soup pot over medium-high heat. Add chicken, 1 tsp Italian seasoning, salt, and pepper. Cook until browned on all sides, about 4–5 minutes.
  2. Cook the Veggies: Add onions, carrots, celery, sun-dried tomatoes, and garlic. Sauté until vegetables are soft and translucent, about 3–4 minutes.
