Ingredients
Crepes:
- 16g unsalted butter (melted)
- 25g granulated sugar
- 2 eggs (about 55g each)
- 238g milk
- 82g cake flour
- 1 tbsp vanilla extract
Filling:
- 220g heavy cream
- 20g granulated sugar
- Fresh mango cubes
Instructions
- In a clean bowl, mix together the melted butter, sugar, eggs, milk, cake flour, and vanilla extract. Sift the mixture twice for smoothness.
- Heat a nonstick pan over low heat. There’s no need to grease the pan. Pour in a scoop of batter and gently swirl the pan to spread it evenly. Pour the excess batter back into the bowl. Let the crepe cook for about 1 minute or until the edges easily peel away from the pan with a spatula. Continue this process until all the batter is used up. Place the cooked crepes on a cooling rack to cool down.
- While the crepes are cooling, prepare the filling. In a clean bowl, combine the heavy cream and sugar. Use a hand mixer to whip the mixture until stiff peaks form. Transfer the whipped cream into a piping bag and refrigerate.
- To assemble the rolls, place three crepes on a baking mat or parchment paper. Spread a layer of whipped cream on each crepe, followed by a layer of fresh mango cubes. Fold the edges of each crepe and roll them up into a log shape.
- Refrigerate the rolled crepes for 30 minutes to set.
