Mango Crepe Rolls

Mango Crepe Rolls are a light and refreshing dessert that combines delicate, buttery crepes with the tropical sweetness of fresh mangoes. These crepes are filled with a creamy mixture, often made of whipped cream or a subtly sweetened cream cheese blend, which balances the natural tartness of the mangoes.

The crepes are gently rolled into a log shape, encasing layers of whipped cream and mango. Some variations may include a drizzle of mango puree or a sprinkle of powdered sugar for added sweetness and an enticing finish. These rolls are best served chilled, making them the perfect treat for warm weather or casual gatherings.

The soft, creamy texture combined with the bright, juicy mango flavor makes Mango Crepe Rolls a popular choice for a lighter dessert, offering a wonderful alternative to heavier options.

Ingredients

Crepes:

  • 16g unsalted butter (melted)
  • 25g granulated sugar
  • 2 eggs (about 55g each)
  • 238g milk
  • 82g cake flour
  • 1 tbsp vanilla extract

Filling:

  • 220g heavy cream
  • 20g granulated sugar
  • Fresh mango cubes

Instructions

  1. In a clean bowl, mix together the melted butter, sugar, eggs, milk, cake flour, and vanilla extract. Sift the mixture twice for smoothness.
  2. Heat a nonstick pan over low heat. There’s no need to grease the pan. Pour in a scoop of batter and gently swirl the pan to spread it evenly. Pour the excess batter back into the bowl. Let the crepe cook for about 1 minute or until the edges easily peel away from the pan with a spatula. Continue this process until all the batter is used up. Place the cooked crepes on a cooling rack to cool down.
  3. While the crepes are cooling, prepare the filling. In a clean bowl, combine the heavy cream and sugar. Use a hand mixer to whip the mixture until stiff peaks form. Transfer the whipped cream into a piping bag and refrigerate.
  4. To assemble the rolls, place three crepes on a baking mat or parchment paper. Spread a layer of whipped cream on each crepe, followed by a layer of fresh mango cubes. Fold the edges of each crepe and roll them up into a log shape.
  5. Refrigerate the rolled crepes for 30 minutes to set.
  6. After chilling, slice the rolls and serve. Enjoy the refreshing sweetness of these Mango Crepe Rolls!
