With a few special ingredients — like smoked paprika, a sharp cheddar and gouda cheese blend, and a buttery Ritz cracker crust — this casserole offers a bold yet familiar flavor that’s sure to win over everyone at the table. Perfect for family dinners, potlucks, or cozy nights in.

🛒 Ingredients

This recipe brings together two beloved dishes into one satisfying meal. Here’s what you’ll need:

For the Meatloaf Base:

  • 2 lbs lean ground beef – The hearty foundation of the dish.
  • 30 Ritz Crackers, crushed – Adds a buttery texture and helps bind the meatloaf.
  • 2 oz Lipton onion soup mix – Infuses deep, savory flavor.
  • 2 eggs – For binding the mixture.
  • 1 cup ketchup
  • 1 cup Sweet Baby Ray’s Hickory & Brown Sugar BBQ Sauce – Combines with ketchup for a smoky-sweet glaze.

For the Mac and Cheese Layer:

  • 3 cups macaroni noodles – Cooked al dente.
  • 2 cups milk
  • 10.5 oz condensed cheddar cheese soup – For a rich, velvety sauce.
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 4 cups shredded cheese blend (cheddar & mozzarella) – Divided into two portions.

🔥 Instructions

1. Preheat Oven & Prepare Dish

Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish to prevent sticking.

2. Mix the Glaze

In a small bowl, combine ketchup and barbecue sauce. Set aside — half will go into the meatloaf and the rest will glaze the top.

3. Make the Meatloaf

In a large bowl, mix together:

  • Ground beef
  • Crushed Ritz crackers
  • Onion soup mix
  • Eggs
  • ½ cup of the ketchup-BBQ sauce mixture

Mix until just combined (don’t overwork it). Press evenly into your prepared dish. Spread the remaining ½ cup of the glaze over the top.

4. Bake the Meatloaf

Bake in the preheated oven for 30 minutes to partially cook the meatloaf.

5. Cook the Pasta

Meanwhile, cook the macaroni noodles according to package directions until just al dente. Drain and set aside.

6. Prepare the Cheese Sauce

In a large bowl, whisk together:

  • Milk
  • Cheddar cheese soup
  • Salt
  • Pepper
  • Garlic powder
  • Onion powder

Stir in cooked macaroni and 2 cups of the shredded cheese blend until well combined.

7. Assemble & Bake Again

Remove the meatloaf from the oven. Carefully spread the mac and cheese mixture over the top. Sprinkle the remaining 2 cups of cheese on top.

Return the dish to the oven and bake for an additional 17–20 minutes, or until the cheese is melted, bubbly, and lightly browned.

Let it rest for 5–10 minutes before serving — this makes slicing easier and helps the flavors settle.

🍽️ Serving Suggestions

  • Garnish with fresh parsley or chopped green onions for a pop of color.
  • Pair with a crisp green salad, steamed veggies, or garlic bread to balance the richness.

🧊 Storage & Reheating Tips

Leftovers? No problem!

  • Refrigerate: Store in an airtight container for up to 3 days.
  • Freeze: Portion and freeze in airtight containers for up to 2 months.
  • To Reheat: Bake covered at 350°F for 20–25 minutes or microwave individual portions.

🔄 Variations & Tips

  • Cheese Options: Try Monterey Jack, gouda, or smoked cheddar for a unique flavor profile.
