This hearty casserole combines tender chicken, crispy bacon, ranch-dressed potatoes, and gooey melted cheese for a meal that’s satisfying, flavorful, and easy to prepare. Perfect for busy weeknights or a comforting weekend dinner!

Ingredients

  • 1 (1.5 lb) bag Baby Boomer Little Potatoes
  • 2 lbs boneless, skinless chicken breasts, cut into 1-inch cubes
  • Salt & pepper, to taste
  • 1/2 cup prepared ranch dressing, divided
  • 2 cups Mexican Cheese Blend
  • 1 cup cooked and crumbled bacon
  • 1/2 cup diced green onion

Instructions

  1. Prepare the Potatoes:
    • Preheat the oven to 450°F.
    • Cut the potatoes into 1-inch cubes and toss them with 1/4 cup ranch dressing, salt, and pepper.
    • Spread the seasoned potatoes evenly in a greased 9×13-inch baking dish.
    • Bake for 30 minutes, stirring every 10 minutes to ensure even cooking.
  2. Prepare the Chicken:
    • While the potatoes are baking, toss the chicken cubes with the remaining ranch dressing, salt, and pepper.
  3. Combine and Cook:
    • Lower the oven temperature to 400°F.
    • Remove the dish from the oven and layer the seasoned chicken over the partially cooked potatoes.
    • Cover with foil and return to the oven for 20 minutes, or until the chicken is fully cooked.
  4. Add Toppings:
    • Remove the foil and sprinkle the casserole with grated cheese, crumbled bacon, and diced green onions.
    • Place back in the oven for 8-10 minutes, or until the cheese is melted and bubbly.
  5. Serve and Enjoy:
    • Let the casserole rest for a few minutes before serving. Pair it with a crisp side salad or enjoy on its own!
