Ingredients

Flavor Base:

  • 1 medium onion, finely chopped

Sauce:

  • 2 tbsp tomato paste
  • 8 oz mushrooms, grated (white, brown, or portobello)
  • ½ tsp rosemary
  • 2 bay leaves (optional)
  • 1 cup dried lentils (green or brown)
  • 4 cups vegetable stock
  • 24 oz tomato puree or passata
  • 1 tsp salt, or to taste
  • ⅛ tsp black pepper
  • 3 tbsp balsamic vinegar (or soy sauce for a different twist)

To Serve:

  • Tagliatelle, fettuccine, spaghetti, or your preferred pasta
  • Fresh basil and grated parmesan (optional)

Instructions

1. Make the Flavor Base

Finely chop the onion, celery, carrot, and garlic. Heat olive oil in a large pot over medium heat and sauté the vegetables for 3 minutes.

Add tomato paste, grated mushrooms, rosemary, bay leaves, salt, and pepper. Sauté for another 5 minutes, stirring occasionally.


2. Add Lentils and Simmer

Rinse lentils carefully, removing any debris. Add lentils, vegetable stock, and tomato puree to the pot. Simmer for 30 minutes, stirring occasionally, until the lentils are tender and the sauce thickens.

Discard the bay leaves and stir in the balsamic vinegar. For a thicker, creamier texture, blend 1–2 cups of the sauce using an immersion blender. Taste and adjust seasoning as needed.


3. Serve with Pasta

Cook your pasta of choice according to package instructions, but undercook by 2 minutes. Reserve 1 cup of pasta water.

Add pasta to a skillet with the lentil bolognese, plus ½ cup reserved pasta water. Toss over medium heat for 1–2 minutes until the sauce coats the pasta. Serve with fresh basil and parmesan on top.

  • Vegetarian/vegan: Skip the parmesan and use egg-free pasta.
  • Gluten-free: Use gluten-free pasta.
  • Substitutions:
    • Mushrooms → grated eggplant
    • Tomato puree → crushed canned tomatoes
    • Balsamic vinegar → soy sauce or tamari
    • Herbs → oregano or thyme instead of rosemary & bay leaves

Storage

  • Refrigerator: 5–7 days in an airtight container.
  • Freezer: Up to 3 months in a freezer-safe container. Thaw in the fridge or microwave before serving.
