Korean Beef Bulgogi (Easy Korean BBQ)

March 8, 2026 by el hassan Leave a Comment

Description

Korean Beef Bulgogi is one of the most popular Korean barbecue dishes, known for its thin slices of tender beef marinated in a sweet and savory sauce. The marinade combines soy sauce, sesame oil, garlic, ginger, and a touch of sweetness for a flavor-packed dish that cooks in just minutes.

Because the beef is sliced very thinly, it absorbs the marinade quickly and cooks incredibly fast, making this recipe perfect for busy weeknight dinners or quick family meals.

Traditionally served with steamed rice, lettuce leaves, and Korean dipping sauces, bulgogi is a versatile dish that can also be enjoyed in bowls, wraps, or even tacos.

What Is Bulgogi?

Bulgogi (๋ถˆ๊ณ ๊ธฐ) literally means โ€œfire meatโ€ in Korean. It refers to thinly sliced meatโ€”most commonly beefโ€”marinated in a mixture of soy sauce, sugar, sesame oil, garlic, ginger, and fruit such as pear.

The pear not only adds a subtle sweetness but also helps tenderize the meat, making it incredibly juicy and flavorful.

While beef is the most traditional option, bulgogi can also be made with chicken or pork.

Ingredients

  • 1ยฝ pounds boneless ribeye steak
  • ยฝ small pear, peeled and coarsely grated
  • ยผ cup reduced-sodium soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons toasted sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1 tablespoon gochujang (Korean red chili paste)
  • 2 tablespoons vegetable oil, divided
  • 2 green onions, thinly sliced
  • 1 teaspoon toasted sesame seeds

Instructions

1. Prepare the Beef

Wrap the steak in plastic wrap and place it in the freezer for about 30 minutes. This helps firm the meat, making it easier to slice.

Once chilled, slice the beef very thinly across the grain, about ยผ-inch thick.

2. Make the Marinade

In a medium bowl, combine:

  • grated pear
  • soy sauce
  • brown sugar
  • sesame oil
  • garlic
  • ginger
  • gochujang

Mix well until the marinade is fully combined.

3. Marinate the Beef

Place the sliced beef and marinade into a large resealable bag or container.

Massage the marinade into the meat and refrigerate for at least 2 hours, or overnight for the best flavor.

4. Cook the Bulgogi

Heat 1 tablespoon vegetable oil in a cast iron grill pan or skillet over medium-high heat.

Cook the beef in small batches, spreading it out in a single layer.

Cook for 2โ€“3 minutes per side, until the meat is caramelized and cooked through.

Repeat with the remaining oil and beef.

5. Serve

Transfer the bulgogi to a serving plate and garnish with:

  • sliced green onions
  • toasted sesame seeds

Serve immediately.

Tips for Success

Freeze the Beef Before Slicing

Partially freezing the steak makes it much easier to cut thin, even slices, which is key to authentic bulgogi.

Use a Pear in the Marinade

Grated pear adds natural sweetness and helps tenderize the beef.

Cook on High Heat

A hot cast iron pan helps achieve the slightly charred, caramelized flavor typical of Korean BBQ.

Cook in Batches

Overcrowding the pan will steam the beef instead of searing it.

Variations

Different Cuts of Beef

Ribeye and top sirloin are ideal, but flank steak or skirt steak can also work well.

Substitute for Pear

If you donโ€™t have a pear, Fuji apple is a great alternative.

Spicier Bulgogi

Add extra gochujang or chili flakes for more heat.

Chicken or Pork Bulgogi

Swap the beef for thinly sliced chicken or pork.

Storage and Freezing

Refrigeration

Store leftovers in an airtight container in the refrigerator for 2โ€“3 days.

Reheating

Let the meat sit at room temperature for 10โ€“15 minutes, then reheat in a skillet over medium-high heat.

Freezing Before Cooking

Place marinated beef in a freezer-safe bag and freeze for up to 2 months.

Thaw overnight in the refrigerator before cooking.

Freezing After Cooking

Cooked bulgogi can also be frozen for up to 2 months and reheated when needed.

How to Serve Korean Beef Bulgogi

Bulgogi is traditionally served with:

  • Steamed white rice
  • Kimchi
  • Sliced cucumbers
  • Perilla leaves or lettuce wraps
  • Ssamjang (Korean dipping sauce)

It also works great in rice bowls, tacos, or lettuce wraps.

Frequently Asked Questions

What cut of beef is best?
