Kielbasa Potato Soup

May 8, 2025 by el hassan Leave a Comment

There’s nothing quite like the comforting combination of smoky kielbasa, tender potatoes, and a rich, cheesy broth to warm you from the inside out. This Kielbasa Potato Soup is a hearty, soul-satisfying dish perfect for chilly nights, busy weeknights, or make-ahead meal prep. With simple ingredients and big flavor, it’s a go-to recipe you’ll turn to again and again.

Why You’ll Love It

This soup is everything comfort food should be: creamy, filling, and full of robust flavor. The smoky depth of kielbasa pairs beautifully with soft, creamy potatoes, while cheddar and Parmesan cheese add richness and body to the broth. It’s a one-pot wonder that brings ease and flavor to your table with minimal cleanup.

Ingredients:

  • 1 tablespoon olive oil
  • 1 pound kielbasa, sliced into ½-inch pieces
  • 2 cloves garlic, minced
  • ½ cup yellow onion, finely diced
  • ½ cup carrots, peeled and finely diced (about 2 large carrots)
  • ½ cup celery, finely sliced (2-3 stalks)
  • 4 cups chicken stock
  • 1½ pounds potatoes, cubed
  • 2 cups heavy cream or whole milk
  • 2 cups shredded cheddar cheese
  • ½ cup shredded Parmesan cheese
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ cup fresh parsley, chopped

Directions:

  1. In a large soup pot or Dutch oven, heat olive oil over medium-high heat. Add the sliced kielbasa and cook for 5-6 minutes, stirring occasionally, until browned. Remove with a slotted spoon and set aside.
  2. In the same pot, add garlic, onion, carrots, and celery. Sauté for 2 minutes, or until fragrant.
  3. Pour in the chicken stock and add the cubed potatoes. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes or until the potatoes are tender.
  4. Return the kielbasa to the pot. Stir in the milk, cheddar, Parmesan, salt, and pepper. Cook on low heat for another 5-10 minutes, stirring frequently, until the cheese is melted and the soup is creamy.
  5. Sprinkle with chopped parsley just before serving.

Make It Your Own

This Kielbasa Potato Soup is endlessly adaptable to suit your taste or dietary needs:

  • Boost the Veggies: Add chopped kale, spinach, or green beans for extra nutrients and color.
  • Spice it Up: A pinch of red pepper flakes or hot sauce gives the soup a warming kick.
  • Extra Protein: Toss in diced ham, crumbled bacon, or even shredded chicken for added heartiness.
  • Low-Carb Option: Substitute potatoes with cauliflower for a lighter version that still delivers creamy texture.
  • Herb Variations: Try thyme, rosemary, or dill for a different aromatic spin.

Storing & Reheating

This soup stores beautifully and tastes even better the next day. Keep leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the microwave. For longer storage, freeze individual portions and thaw overnight in the fridge before reheating.

Whether you’re making it for a quiet weeknight, a weekend gathering, or prepping meals for busy days ahead, this recipe delivers every time.
