Irresistible Lemon Cake Recipe

This lemon cake is a family favorite, especially during the holiday season! It’s moist, flavorful, and soaked in a zesty syrup that makes every bite unforgettable.

Ingredients

For the Cake:

  • 1 box yellow cake mix (15.25 oz)
  • 1 box instant lemon pudding mix (3.4 oz)
  • ¾ cup water
  • ¾ cup oil
  • 4 large eggs

For the Soaking Syrup:

  • 2 cups powdered sugar
  • ⅓ cup fresh lemon juice
  • 2 tablespoons unsalted butter, melted
  • 2 tablespoons water

Instructions

  1. Preheat & Prepare: Preheat your oven to 350°F. Grease a 9×13-inch baking pan.
  2. Mix the Batter: In a large bowl, beat the eggs using an electric mixer. Add the cake mix, pudding mix, water, and oil. Mix until smooth and well combined.
  3. Bake: Pour the batter into the prepared baking pan. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  4. Make the Syrup: While the cake is baking, prepare the soaking syrup. In a bowl, whisk together powdered sugar, lemon juice, melted butter, and water until smooth.
  5. Soak the Cake: Once the cake is done, poke holes all over the surface using a skewer or fork. Pour the soaking syrup evenly over the warm cake, allowing it to seep in.
  6. Cool & Serve: Let the cake cool completely in the pan before slicing and serving. Enjoy!
