4 cups chopped fresh tomatoes
1 slice onion
4 cloves garlic
2 cups chicken broth
2 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon salt
2 teaspoons white sugar, or to taste
Directions
- Combine the tomatoes, a sizable chunk of onion, a few garlic cloves, and chicken broth in a stockpot over medium heat. To mix the flavors, bring to a gentle boil and cook for 20 minutes. Remove from heat and pour the mixture into a sizable basin or pan after passing it through a food mill. Throw away any leftovers from the food processor.
- Melt the butter over medium heat in the stockpot that is now empty. Make a roux by stirring in the flour and heating it until it reaches a medium brown color. Stir in the remaining tomato mixture after whisking in a small amount of it gradually to prevent lumps. Add salt and sugar to taste and season.
