Delicious Egg Salad for Sandwiches
½ cup mayonnaise
¼ cup chopped green onion
1 teaspoon prepared yellow mustard
¼ teaspoon paprika
salt and pepper to taste
- In a saucepan, add the eggs and then the cold water. Once the water has reached a rolling boil, turn off the heat. For 10 to 12 minutes, cover the eggs and let them sit in hot water. Peel, chop, and let cool after removing from boiling water.
- In a bowl, combine the diced eggs with the mustard, mayonnaise, and green onion. Add paprika, salt, and pepper for seasoning. Serve with your preferred bread or crackers after stirring.
