Ingredients

  • 1 box Jiffy Corn Muffin Mix (8 ounces, dry mix only)
  • 15 ounces whole kernel corn (drained)
  • 15 ounces creamed corn (not drained)
  • 1 cup sour cream
  • ½ cup melted butter

Instructions

  1. Preheat Oven: Set your oven to 350°F (175°C). Grease an 8×8-inch baking dish with cooking spray.
  2. Mix Ingredients: In a mixing bowl, combine the Jiffy mix, drained whole kernel corn, creamed corn, sour cream, and melted butter. Stir until fully incorporated.
  3. Transfer to Baking Dish: Pour the mixture into the prepared baking dish, spreading it evenly.
  4. Bake: Cook uncovered for 45–50 minutes, or until the top is lightly golden brown.
  5. Season and Serve: Add salt and black pepper to taste. For garnish, sprinkle with fresh parsley or sliced green onions if desired.

  • Sour Cream Tip: Use sour cream at room temperature or slightly warmed to mix more easily.
  • Frozen Corn Substitute: Replace canned corn with 12 ounces of frozen sweet corn kernels for a fresh taste.
