It’s quick, flavorful, and made with everyday ingredients, but it tastes like it came from a top-notch restaurant.

This recipe combines crisp-tender broccoli and juicy mushrooms with bold Chinese aromatics and a glossy, savory sauce. The result? A veggie stir fry that’s anything but boring.

Ingredients You’ll Need

For the Sauce

  • 2 tbsp vegetable broth
  • 1½ tbsp light soy sauce
  • ½ tsp dark soy sauce
  • 1 tsp sugar
  • ¼ tsp ground black pepper
  • ½ tsp sesame oil

For the Cornstarch Slurry

  • 1 tbsp cornstarch
  • 2 tbsp water

For the Stir Fry

  • 1 lb broccoli, cut into bite-size florets
  • Pinch of salt
  • 2½ tbsp peanut oil
  • ½ lb button mushrooms, sliced
  • 4 dried Chinese chili peppers (optional, for heat)
  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 2 green onions, sliced

To make this dish gluten-free, simply swap the soy sauce with tamari.


How to Make Broccoli and Mushroom Stir Fry

1. Mix the Sauce & Slurry

Start by combining all sauce ingredients in a small bowl. In another bowl, mix the cornstarch with water to create your slurry. Set both aside.

2. Steam the Broccoli

In a large skillet over medium-high heat, add ¼ cup of water. Once boiling, add the broccoli and a pinch of salt. Cover and steam for 1 minute. Remove the lid and stir until the water evaporates and broccoli turns bright green and just tender. Transfer to a plate.

3. Sauté the Mushrooms

Wipe the pan clean and heat 2 tablespoons of oil over high heat. Add mushrooms in a single layer and sear for 1 minute without stirring. Flip and cook another 2–3 minutes, stirring occasionally, until browned and most of the moisture is gone.

4. Add Aromatics

Push the mushrooms to one side of the pan. Add the remaining ½ tablespoon oil to the empty side, then add the chili peppers, garlic, ginger, and green onions. Stir until fragrant and the chili peppers darken. Mix everything together.

5. Combine & Finish

Return the broccoli to the pan. Pour in the sauce and stir to coat. Stir the cornstarch slurry again and pour it in. Cook until the sauce thickens and everything is coated in glossy goodness. Serve immediately.

  • Don’t overcook the broccoli. Bright green and slightly tender is perfect.
  • Let mushrooms brown. Give them time to develop flavor and color before stirring.
  • Customize it. Add tofu, swap in snap peas, or drizzle with chili crisp for extra flair.
