Crispy Sesame Chicken – A Flavor-Packed Takeout Classic!

Bite-sized pieces of tender chicken are coated in a crispy batter, fried to golden perfection, and tossed in a sweet, savory, and nutty sesame sauce. What is Sesame Chicken?

Sesame Chicken is a popular Chinese-American dish found in many takeout spots like Panda Express. Similar to Orange Chicken, it has a sticky, glossy sauce, but with a nuttier and slightly sweeter flavor, thanks to sesame oil and sesame seeds.


Ingredients

For the Chicken:

  • 450g (1 lb) chicken thighs or breast, cut into bite-sized pieces
  • 1/2 cup cornstarch
  • 2 tbsp all-purpose flour
  • 1 tbsp soy sauce
  • 1 egg white
  • 1/4 tsp white pepper
  • 1/3 cup water
  • Neutral oil, for frying

For the Sesame Sauce:

  • 3 tbsp honey
  • 2 tbsp soy sauce
  • 1 1/2 tbsp ketchup
  • 1 1/2 tbsp sesame oil
  • 1 1/2 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1 tbsp Shaoxing wine (optional)
  • 1 clove garlic, grated
  • 2 tsp sesame seeds
  • 1 green onion, chopped (for garnish)

Instructions

1. Prepare the Batter

In a mixing bowl, combine cornstarch, flour, soy sauce, egg white, white pepper, and water. Stir until smooth and thick. Add the chicken pieces and toss to coat evenly.

2. Fry the Chicken

  • Heat oil in a deep pan to 330-340°F (165-170°C).
  • Fry the chicken in batches for 5-7 minutes until golden and crispy.
  • Optional but recommended: Increase heat to 375°F (190°C) and fry for another 30-60 seconds for extra crispiness. Drain on a wire rack.

3. Make the Sesame Sauce

  • In a pan over medium heat, mix honey, soy sauce, ketchup, sesame oil, brown sugar, rice vinegar, Shaoxing wine, and grated garlic.
  • Let it simmer for 1-2 minutes until slightly thickened.

4. Coat the Chicken

  • Add the crispy chicken to the pan and toss quickly to coat in the sauce.
  • Sprinkle sesame seeds and toss again.
  • Serve immediately, garnished with chopped green onions.

Tips for the Best Sesame Chicken

✅ Don’t overcook the sauce – Boil for just 1-2 minutes to prevent it from becoming too thick or bitter. If it reduces too fast, add a splash of hot water.

✅ Double frying = extra crispiness – The second fry at a higher temperature ensures the chicken stays crunchy, even after being coated in sauce.

✅ Add sesame oil at the end – This keeps its nutty aroma intact, enhancing the dish’s flavor.

✅ Toss the chicken quickly – Only 10-20 seconds in the sauce to prevent it from getting soggy.
