Ingredients (Serves 4)

For the Parmesan Crusted Chicken:

  • 2 large chicken breasts, halved into 4 thin cutlets
  • ½ cup (60g) grated Parmesan cheese
  • ½ cup (60g) panko breadcrumbs
  • ½ cup (60g) all-purpose flour
  • 2 eggs, beaten
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil (for frying)
  • 1 tablespoon butter

For the Creamy Garlic Sauce:

  • 3 cloves garlic, minced
  • 1 cup (240ml) heavy cream
  • ½ cup (50g) grated Parmesan cheese
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ tablespoon butter
  • ½ cup (120ml) chicken broth
  • 1 teaspoon cornstarch mixed with 1 tablespoon water (optional, for thickening)

Instructions

Step 1: Prepare the Chicken
Slice the chicken breasts in half horizontally to make 4 thin cutlets.
In a shallow dish, mix together the Parmesan, panko breadcrumbs, garlic powder, paprika, salt, and pepper.
Place flour in a separate shallow dish, and beat the eggs in another.
Coat each chicken cutlet in flour, then dip in the egg, and finally press into the Parmesan breadcrumb mixture, ensuring it sticks well.

Step 2: Cook the Chicken
Heat olive oil and butter in a large skillet over medium heat.
Cook the chicken cutlets for 4-5 minutes per side, or until golden brown and crispy.
Transfer cooked chicken to a plate and cover loosely with foil to keep warm.

Step 3: Make the Creamy Garlic Sauce
In the same skillet, melt butter and sauté the minced garlic for about 1 minute until fragrant.
Add chicken broth, scraping the pan to loosen any browned bits.
Pour in the heavy cream, then stir in Parmesan cheese, Italian seasoning, salt, and pepper.
Let simmer gently for 2-3 minutes until smooth and slightly thickened. For a thicker sauce, stir in the cornstarch slurry and cook for an additional minute.

Step 4: Serve
Return the chicken cutlets to the skillet and spoon the creamy garlic sauce over the top.
Garnish with fresh parsley or extra Parmesan if desired.
Serve alongside garlic mashed potatoes, roasted asparagus, or butter garlic noodles.

Tips for the Best Parmesan Crusted Chicken

  • Use thin chicken cutlets for faster, more even cooking.
  • Press the breadcrumb coating firmly onto the chicken to help it stick.
  • Avoid overcrowding the pan to keep the crust crispy — cook in batches if needed.
  • Simmer the sauce gently; boiling can cause it to separate.

Storage & Reheating

  • Store: Keep leftovers in an airtight container in the fridge for up to 3 days.
  • Reheat: Warm in a skillet over low heat, adding a splash of cream if the sauce has thickened too much.
  • Freeze: Freeze chicken cutlets separately (without sauce) for up to 2 months. Reheat in the oven at 350°F (175°C) for 15 minutes.

Serving Suggestions

  • Garlic mashed potatoes for soaking up the creamy sauce
  • Roasted or steamed asparagus for a fresh side
  • Butter garlic noodles for a comforting carb option

Variations & Customizations

  • Add red pepper flakes to the sauce for a spicy kick.
  • Stir in fresh herbs like basil or parsley for extra flavor.
  • Roast a head of garlic and mash it into the sauce for a deeper garlic taste.

Enjoy this restaurant-quality Parmesan Crusted Chicken at home — it’s sure to impress!
