  • Oil – A small amount of oil keeps the cupcakes soft even after cooling.

For the Filling & Topping:

  • Easy Vanilla Pastry Cream – This is your filling and frosting in one.

Step-by-Step Instructions

1. Make the Pastry Cream

Start by making the One-Pot Vanilla Pastry Cream. It needs time to chill and set, so prep it at least 4 hours ahead—or even better, the day before.

2. Make the Cupcake Batter

  • Cream butter, sugar, and vanilla until light and fluffy—about 3 minutes.
  • Add eggs one at a time, beating well after each.
  • Whisk milk and oil together in a small bowl.
  • Alternate adding dry ingredients and milk mixture into the batter, beginning and ending with the dry. Don’t over-mix, but do beat briefly at the end to emulsify.

3. Bake

Divide the batter into lined muffin tins, filling each about 2/3 full. Bake at 350°F for 18–20 minutes. Let them cool completely before filling.

4. Fill & Frost with Custard

Once cooled, cut a small cone from the center of each cupcake. Fill with pastry cream, then add a generous dollop on top and smooth it out. Chill cupcakes for at least 15 minutes to let the custard set.

5. Caramelize the Tops

Dip each frosted cupcake top into coarse sugar. Using a kitchen torch, caramelize the sugar until golden and glassy. Let set briefly, then serve and enjoy that signature crack.

  • ¼ tsp salt
  • ⅓ cup + 1 tbsp (95ml) whole milk
  • 1 tbsp (15ml) neutral oil (sunflower, canola, or vegetable)

Instructions

  1. Preheat oven to 350°F. Line a 12-cup muffin pan with paper liners.
  2. Make the pastry cream and chill for at least 4 hours.
  3. Cream butter, sugar, and vanilla until fluffy. Beat in eggs one at a time.
  4. Whisk milk and oil together. In a separate bowl, combine flour, cornstarch, baking powder, and salt.
  5. Alternate adding dry and wet ingredients to the batter. Beat briefly to emulsify.
  6. Divide batter into cupcake liners. Bake 18–20 minutes. Cool completely.
