This Creamy Mushroom Chicken Recipe is a flavor-packed dish made with tender chicken, savory mushrooms, and a rich, creamy sauce. Cooked in just one skillet, it’s a quick and satisfying meal that can be served on its own or with your favorite sides for a restaurant-quality experience at home!


Ingredients You’ll Need

For the Chicken:

  • 1/3 cup all-purpose flour (substitute gluten-free if needed)
  • 1 teaspoon paprika
  • 2 teaspoons dried thyme, divided
  • 2 teaspoons dried oregano, divided
  • 1 teaspoon sea salt, divided
  • 1 teaspoon freshly ground black pepper, divided
  • 1 teaspoon chili flakes (adjust to taste)
  • 4 boneless, skinless chicken breasts, sliced in half
  • 4 tablespoons olive oil, divided

For the Sauce:

  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes
  • 1/3 cup Kalamata olives, sliced
  • 2 cups mushrooms (cremini, baby bella, or preferred type)
  • 1/2 cup heavy cream
  • 1/2 cup chicken stock (preferably low-sodium)
  • 1 cup Parmesan cheese, freshly grated
  • 2 cups fresh spinach

How to Make Creamy Mushroom Chicken

Step 1: Prepare the Chicken

  1. In a shallow bowl or on a clean workspace, mix the flour, paprika, 1 teaspoon thyme, 1 teaspoon oregano, 1/2 teaspoon salt, and 1/2 teaspoon black pepper.
  2. Season the chicken with the remaining salt, pepper, oregano, thyme, and chili flakes.
  3. Dredge the chicken in the flour mixture, coating each piece evenly. Shake off excess flour.

Step 2: Sear the Chicken

  1. Heat 2 tablespoons of olive oil in a large non-stick skillet over medium heat.
  2. Add the chicken and cook for 3-5 minutes per side until golden brown. Do not overcook, as the chicken will continue cooking later. Transfer to a plate and set aside.

Step 3: Make the Creamy Sauce

  1. In the same skillet, add the remaining 2 tablespoons of olive oil along with the minced garlic, sun-dried tomatoes, olives, and mushrooms.
  2. Sauté for 3-5 minutes until fragrant, stirring frequently.
  3. Pour in the heavy cream and chicken stock. Stir in the Parmesan cheese, spinach, and another pinch of salt and pepper.
  4. Allow the sauce to simmer for a few minutes until it begins to thicken.

Step 4: Combine and Serve

  1. Return the seared chicken to the skillet, spooning the creamy sauce over the top.
  2. Continue cooking until the chicken reaches an internal temperature of 165°F (75°C).
  3. Adjust the seasoning as needed and serve warm!
