Why You’ll Love This Soup

This Italian sausage pasta soup has all the comfort of a rich, saucy pasta dish but in a lighter, spoon-worthy form. The ingredients are minimal, but each one adds something special—especially the Italian sausage, which brings huge flavor without needing long simmering time.

It’s warming, filling, and big on comforting tomato-herb goodness. And bonus—no cream needed!

Ingredients You’ll Need

  • Italian sausage – mild works beautifully, removed from casings or bulk sausage
  • Onion and garlic – sweet onion adds great depth
  • Crushed tomatoes – fire roasted for extra richness
  • Beef broth – gives the soup body and savory depth
  • Red bell pepper – adds color and veggie sweetness
  • Italian seasoning + oregano – aromatic herb blend
  • Red pepper flakes – totally optional, but adds gentle warmth
  • Pasta – rotini or fusilli hold onto all that flavorful broth
  • Fresh basil – bright, fragrant, and perfect for finishing
  • Parmesan – for those extra cozy finishing touches

Pro Tip

Take your time browning the sausage and onions — those caramelized bits add even more flavor to the soup!

How to Make It

  1. Brown the sausage & onions
Add sausage and onion to a soup pot and cook until golden. Spoon off excess fat if needed.
  2. Build the base
Stir in garlic and cook briefly. Add crushed tomatoes, broth, bell pepper, herbs, and red pepper flakes.
  3. Cook the pasta directly in the soup
Bring to a boil, stir in pasta, reduce heat, and simmer until al dente—this lets the pasta soak up all the flavor.
  4. Finish & serve
Stir in fresh basil and season to taste. Ladle into bowls and top with parmesan if you like.

Variations & Substitutions

  • Add a splash of cream at the end for an extra-luxurious broth.
  • Swap the pasta shape—just adjust broth and cooking time.
  • Stir in a handful of spinach near the end for more greens.

What to Serve With It

Pair your bowl with:

  • Extra Cheesy Garlic Bread
  • Caesar salad with homemade dressing
  • Or simply crusty bread dipped in olive oil and balsamic

Storage Tips

  • Fridge: 3–4 days. Expect pasta to soak up broth—add a splash when reheating.
  • Freezer: Up to 3 months, but freeze without pasta if possible for best texture.
  • Meal prep tip: Cook pasta separately and add when serving if you expect leftovers.
