Chocolate Chip Banana Bars

These Chocolate Chip Banana Bars are irresistibly tender, moist, and packed with sweet banana flavor and melty chocolate chips. Perfect for using up overripe bananas, they’re like banana blondies with a chocolatey twist!

Prep Time: 10 minutes

Cook Time: 35 minutes

Total Time: 45 minutes

Servings: 16 squares


Ingredients:

  • 1/2 cup unsalted butter (softened, 113g)
  • 1 cup packed light or dark brown sugar (200g)
  • 1 large egg (room temperature, 56g)
  • 1 1/2 tsp vanilla extract (6g)
  • 1/2 tsp fine salt (3g)
  • 1 cup all-purpose flour (125g)
  • 1 cup mashed overripe banana (about 2 large bananas, 250g)
  • 3/4 cup chocolate chips (chopped, plus extra for topping, 125g)

Instructions:

  1. Preheat and Prepare the Pan
    Preheat the oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper and lightly coat with cooking spray. Set aside.
  2. Cream Butter and Sugar
    In a large mixing bowl or the bowl of a stand mixer, cream together the butter and brown sugar on medium-high speed for 2 minutes, or until the mixture becomes light and fluffy.
  3. Incorporate Wet Ingredients
    Add the egg, vanilla extract, and salt. Mix on medium-low speed until fully combined. Scrape down the sides of the bowl as needed.
  4. Mix in Dry Ingredients
    Add the flour and mix on low speed until just incorporated.
  5. Add Bananas and Chocolate Chips
    Gently fold in the mashed bananas until evenly distributed. Fold in the chocolate chips, reserving a few to sprinkle on top.
  6. Pour and Bake
    Pour the batter into the prepared pan and smooth the top. Sprinkle the reserved chocolate chips evenly over the batter.
    Bake for 33-37 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean. Rotate the pan halfway through baking for even cooking.
  7. Cool and Slice
    Allow the bars to cool completely in the pan on a wire rack. Once cooled, gently lift the parchment paper to remove the bars from the pan. Slice into 16 squares using a sharp knife, wiping the blade clean between cuts.

Storage Tips:

  • Store the bars in an airtight container at room temperature for up to 2 days.
  • For longer storage, refrigerate for up to 1 week or freeze for up to 3 months.
