Ingredients:
- 1/2 cup unsalted butter (softened, 113g)
- 1 cup packed light or dark brown sugar (200g)
- 1 large egg (room temperature, 56g)
- 1 1/2 tsp vanilla extract (6g)
- 1/2 tsp fine salt (3g)
- 1 cup all-purpose flour (125g)
- 1 cup mashed overripe banana (about 2 large bananas, 250g)
- 3/4 cup chocolate chips (chopped, plus extra for topping, 125g)

Instructions:
- Preheat and Prepare the Pan
Preheat the oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper and lightly coat with cooking spray. Set aside. - Cream Butter and Sugar
In a large mixing bowl or the bowl of a stand mixer, cream together the butter and brown sugar on medium-high speed for 2 minutes, or until the mixture becomes light and fluffy. - Incorporate Wet Ingredients
Add the egg, vanilla extract, and salt. Mix on medium-low speed until fully combined. Scrape down the sides of the bowl as needed. - Mix in Dry Ingredients
Add the flour and mix on low speed until just incorporated. - Add Bananas and Chocolate Chips
Gently fold in the mashed bananas until evenly distributed. Fold in the chocolate chips, reserving a few to sprinkle on top. - Pour and Bake
Pour the batter into the prepared pan and smooth the top. Sprinkle the reserved chocolate chips evenly over the batter.
Bake for 33-37 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean. Rotate the pan halfway through baking for even cooking. - Cool and Slice
Allow the bars to cool completely in the pan on a wire rack. Once cooled, gently lift the parchment paper to remove the bars from the pan. Slice into 16 squares using a sharp knife, wiping the blade clean between cuts.
