Chewy Peanut Butter Oatmeal Bars

These soft and chewy peanut butter oatmeal bars are a delicious combination of nutty, buttery goodness with just the right amount of sweetness. Perfect for a quick snack, dessert, or lunchbox treat, this easy recipe comes together in no time!

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 cup creamy peanut butter
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups quick oats

Instructions

1️⃣ Preheat & Prepare – Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish and set aside.
2️⃣ Mix Wet Ingredients – In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy. Add the peanut butter, eggs, and vanilla extract, then mix until smooth.
3️⃣ Combine Dry Ingredients – In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this to the wet ingredients, stirring until just combined.
4️⃣ Incorporate Oats – Gently fold in the quick oats until evenly distributed throughout the dough.
5️⃣ Bake to Perfection – Spread the mixture evenly into the prepared baking dish. Bake for 20-25 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
6️⃣ Cool & Serve – Allow the bars to cool completely in the pan before cutting into squares. Enjoy!

Recipe Notes

  • For extra texture, add chocolate chips or chopped nuts to the batter.
  • Drizzle melted chocolate or peanut butter on top for added decadence.
  • Store in an airtight container for up to 5 days or freeze for later!
