Chai Spice Cookies Recipe

Soft, cozy, and packed with fall flavors, these Chai Spice Cookies are like snickerdoodles with a seasonal twist! Made with a homemade chai spice blend, these cookies are warm, comforting, and perfect for cooler weather.

Ingredients

For the Cookies

  • 2 ¾ cups all-purpose flour
  • 2 teaspoons cream of tartar
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • 4 teaspoons chai spice mix
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • ½ cup light brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract

For the Topping

  • ¼ cup granulated sugar
  • 1 ½ tablespoons chai spice mix

Instructions

1. Prepare the Dough

  • In a medium bowl, whisk together flour, cream of tartar, baking soda, salt, and chai spice.
  • In a large mixing bowl, cream together butter and both sugars using an electric mixer until light and fluffy, about 3 minutes.
  • Add eggs and vanilla to the creamed mixture and beat for 1-2 minutes, until combined.
  • Gradually add the dry ingredients to the wet mixture, mixing on low speed until just incorporated. Avoid overmixing.
  • Cover and refrigerate the dough for at least 30 minutes or up to overnight.

2. Preheat the Oven

  • When ready to bake, preheat your oven to 350°F. Line cookie sheets with parchment paper.

3. Make the Topping

  • In a small bowl, mix together the granulated sugar and chai spice for the topping.

4. Shape the Cookies

  • Scoop dough into 1 ½-tablespoon portions and roll into balls.
  • Coat each ball in the chai-sugar mixture, ensuring an even layer.

5. Bake the Cookies

  • Place the coated dough balls on the prepared cookie sheet, spacing them about 3 inches apart.
  • Bake for 7-10 minutes, until the edges are lightly golden.

6. Cool and Enjoy

  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Serve with a cup of tea or coffee for the ultimate fall treat!


Notes

  • Chai Spice Mix: If you don’t have a pre-made mix, create your own with cinnamon, cardamom, ginger, allspice, and cloves.
  • Refrigeration: Chilling the dough ensures the cookies hold their shape while baking and enhances the flavors.
  • Storage: Keep cookies in an airtight container at room temperature for up to 5 days or freeze for up to 3 months.
