Cajun Chicken with Coriander and Lime Rice

This easy 30-minute meal features juicy Cajun-spiced chicken, perfectly charred veggies, and zesty coriander-lime rice for a flavor-packed dinner that’s both nourishing and satisfying.

What You’ll Need:

  • Chicken: 2 skinless chicken breasts
  • Cajun Seasoning: Store-bought or homemade (paprika, garlic powder, cayenne, oregano, etc.)
  • Rice: 3/4 cup (150g) dried long-grain rice
  • Veggies: Red, yellow, and green bell peppers, and one small brown onion
  • Fresh Flavors: A small bunch of coriander (cilantro), lime zest, and avocado
  • Olive Oil: For brushing the pan and cooking

Instructions:

  1. Cook the Rice:
    • Boil water and cook rice for about 15 minutes, or until tender. Drain and set aside.
  2. Prep the Chicken:
    • Rub Cajun seasoning and half the olive oil into the chicken breasts. Slightly flatten with your hands.
    • Heat a griddle pan over high heat, brush with oil, and cook chicken for 7–10 minutes, turning once, until charred and cooked through. Rest the chicken on a board.
  3. Char the Veggies:
    • Add the remaining oil to the griddle. Cook sliced peppers and onion for 5–6 minutes, turning occasionally, until lightly charred and tender.
  4. Flavor the Rice:
    • Fluff the cooked rice with a fork, then stir in the chopped coriander and lime zest.
  5. Assemble the Bowls:
    • Divide rice between two bowls. Slice the rested chicken and place on top.
    • Add charred vegetables and chopped avocado.

Serving Suggestion:

Top with a spoonful of guacamole or a squeeze of fresh lime for an extra burst of flavor.
