This recipe was inspired by my kids’ creativity in the kitchen. One morning, my youngest asked if we could make a breakfast version of grilled cheese—and the answer was a definite yes! With just a few simple ingredients, we made these crispy, cheesy sandwiches packed with scrambled eggs and sausage. You can easily swap in bacon or ham—or skip the meat altogether.

This easy recipe is perfect for busy mornings, lazy weekends, or when you want something filling and satisfying in under 30 minutes!


Ingredients You’ll Need

  • ½ lb ground breakfast sausage – or use crumbled bacon or chopped ham
  • 6 large eggs, beaten
  • 8 slices Colby-Jack cheese – or your favorite melty cheese
  • 4 tablespoons soft butter, divided – or mayo for toasting
  • 8 slices sourdough bread – or any sturdy sandwich bread

How to Make a Breakfast Grilled Cheese

Time needed: 30 minutes

  1. Cook the Sausage
    In a large non-stick skillet, brown and crumble the sausage over medium heat until no longer pink. Transfer it to a paper towel-lined bowl. Wipe out the skillet.
  2. Scramble the Eggs
    Melt 2 tablespoons of butter in the same skillet. Add the eggs and gently stir until softly scrambled. Remove from heat when just set.
  3. Combine Eggs and Sausage
    Discard the paper towel from the bowl, then stir the scrambled eggs into the cooked sausage.
  4. Assemble the Sandwiches
    Butter one side of each bread slice. Place one slice, butter-side down, in the skillet. Top with cheese, the sausage-egg mixture, another slice of cheese, and a second slice of bread (butter-side up).
  5. Grill Until Golden
    Cook 3–4 minutes per side until golden brown and the cheese is melted. Repeat with remaining ingredients.
  6. Serve and Enjoy
    Cut the sandwiches in half, if desired, and serve warm!

Recipe Tips & Variations

  • Skip the meat for a vegetarian version with just eggs and cheese.
  • Swap the eggs – Try over-easy or over-medium eggs instead of scrambled if you prefer a runny yolk.
  • Use mayo instead of butter – It gives the bread a golden, crispy texture and has a higher smoke point than butter.
  • Add fresh tomato slices with a pinch of salt and pepper for extra flavor!

Make Ahead:
You can prep the egg and sausage mixture ahead of time, then assemble and grill fresh in the morning.

Freezing:
Let sandwiches cool completely, then wrap and freeze in zip-top bags or airtight containers.

Reheating:
Microwave until heated through, then re-crisp the outside in a skillet or toaster oven for the best texture.
