If you’re craving a quick, satisfying meal packed with flavor, this pepper steak is the perfect solution. Rich, saucy, and loaded with tender beef, crisp bell peppers, and onions, it’s a cozy dish best enjoyed over fluffy white rice.

From Childhood Favorites to Homemade Perfection
Growing up, one of my go-to meals was a boxed microwaveable pepper steak over rice. For a frozen dinner, it actually tasted pretty good—savory, comforting, and ready in minutes. Even as a kid, I didn’t mind the bell peppers—they soaked up the sauce beautifully and paired perfectly with the white rice.
Today, I recreate that nostalgia with fresh, high-quality ingredients. The difference? Homemade pepper steak is rich, flavorful, and made with love—a far cry from any frozen dinner.
Ingredients & Flavor Boosters
For my version, I keep things simple but packed with bold flavors:
- Beef: Thinly sliced, grass-fed ribeye adds tenderness and deep, beefy flavor.
- Vegetables: Lots of green bell peppers and onions provide a vibrant, peppery crunch.
- Spices: Smoked paprika, sweet paprika, black pepper, and a hint of white pepper elevate the flavor profile.
- Sauce: Tomato paste and beef stock create a rich, savory sauce that ties everything together.
How to Make Pepper Steak
- Sear the Beef: Quickly sear the thinly sliced ribeye in a hot cast-iron skillet until browned on the outside but still rare inside. Remove from the pan.
- Sauté Veggies: In the same skillet, sauté onions with spices until fragrant. Add bell peppers just until crisp-tender, keeping their vibrant color. Stir in garlic for a final punch of flavor.
- Build the Sauce: Whisk in tomato paste and beef stock, simmering until the sauce thickens slightly.
- Combine: Return the beef to the pan, toss everything together, and remove from heat.
- Serve: Spoon over fluffy white rice and garnish with fresh green onions or parsley for a finishing touch.
Why You’ll Love This Recipe
- Quick & Easy: From skillet to table in under 30 minutes.
- Flavorful & Cozy: Bold spices, tender beef, and a rich sauce make this a comfort-food favorite.

Ingredients
2–2½ pounds ribeye steaks, thinly sliced
Salt & black pepper, to taste
2 tablespoons flour
2–3 tablespoons avocado oil
2 small onions, halved and thinly sliced
½ teaspoon Italian seasoning
½ teaspoon paprika
¼ teaspoon smoked paprika
¼ teaspoon white pepper
3 medium-large bell peppers, cored and thinly sliced (about 3 cups)
3 cloves garlic, minced
5 tablespoons tomato paste
½ cup beef stock or broth
Rice or preferred side, for serving
Chopped green onions or parsley, for garnish
Directions
- Prep the Steak:
- Place the sliced ribeye in a large bowl. Season generously with salt and black pepper, then sprinkle with flour and toss to coat evenly.
- Sear the Beef:
- Heat 2–3 tablespoons of avocado oil in a large heavy-bottom skillet or cast-iron pan over medium-high heat. Working in batches, sear the steak strips for about 2 minutes per batch, until browned on the outside. Remove the steak and set aside.
- Sauté Onions & Spices:
- Add a touch more oil to the pan. Sauté the onions for about 10 minutes until softened and golden brown. Season with salt, black pepper, Italian seasoning, paprika, smoked paprika, and white pepper, stirring to combine.
- Cook the Bell Peppers & Garlic:
- Add the bell peppers and cook for 2–3 minutes until slightly tender but still crisp. Stir in the garlic and cook just until fragrant.
- Make the Sauce:
- Stir in the tomato paste and cook for about 30 seconds to remove the raw flavor. Add the beef stock/broth, stirring to create a rich, flavorful sauce. Taste and adjust seasoning if needed.
- Combine & Heat Through:
- Return the seared steak to the skillet, stirring to coat in the sauce. Simmer for 30 seconds to 1 minute to warm the beef through and thicken the sauce slightly.
