Blueberry Cream Cheese Muffins Recipe

Start your day with a burst of flavor with these delectable Blueberry Cream Cheese Muffins. The combination of sweet blueberries and a creamy, tangy cream cheese filling creates the perfect balance of flavors. These muffins are easy to make and the ultimate breakfast treat to satisfy your morning cravings.

Ingredients:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 cup unsalted butter, melted
  • 1 egg
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh blueberries
  • 4 oz cream cheese, softened
  • 3 tbsp granulated sugar
  • 1 egg yolk

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease with cooking spray.
  2. Mix Dry Ingredients: In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Combine Wet Ingredients: In another bowl, whisk together the melted butter, egg, milk, and vanilla extract.
  4. Combine Wet and Dry Ingredients: Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Fold in Blueberries: Gently fold in the fresh blueberries.
  6. Prepare the Cream Cheese Filling: In a small bowl, beat the cream cheese, sugar, and egg yolk until smooth.
  7. Assemble the Muffins: Spoon the muffin batter evenly into the prepared muffin cups, filling them halfway. Add a heaping teaspoonful of the cream cheese mixture on top of the batter in each muffin cup, then cover with the remaining muffin batter, filling each cup about 3/4 full.
  8. Bake: Bake for 18-22 minutes, or until the muffins are golden and a toothpick inserted into the center comes out clean.
  9. Cool: Allow the muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
