  • 1 cup butter (softened, unsalted)
  • 8 oz cream cheese (softened)
  • 3/4 cup sugar

  • 4 large eggs

  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 cups fresh blueberries (tossed in 1 tablespoon of flour)

Instructions

  1. Preheat and Prepare Pans:
    Preheat your oven to 350°F. Grease two 9×5-inch loaf pans and set aside.
  2. Cream Wet Ingredients:
    In a large mixing bowl, use an electric hand mixer to cream together the butter, cream cheese, and sugar until light and fluffy.

    Mix in the vanilla extract and eggs, one at a time, until fully incorporated.
  4. Combine Dry Ingredients:
    Gradually add the flour, baking powder, and salt to the wet mixture. Mix just until combined—avoid overmixing.
  5. Fold in Blueberries:
    Gently fold in the blueberries coated in flour. This helps prevent them from sinking to the bottom of the bread.
  6. Pour Batter into Pans:
    Evenly distribute the thick batter between the prepared loaf pans.
  7. Bake:
    Place the pans in the preheated oven and bake for approximately 50 minutes. Check for doneness by inserting a toothpick into the center; it should come out clean.
  8. Cool and Serve:
    Remove the loaves from the oven and let them cool slightly before taking them out of the pans. Slice and enjoy warm or at room temperature!
