Big Boy’s Fresh Strawberry Pie (Copycat Recipe)

If you’re lucky enough to live near a Big Boy restaurant, then you’ve probably had the joy of digging into a slice of their iconic Fresh Strawberry Pie. But for those of us who don’t live near one—or just want to enjoy this sweet, fruity treat anytime—this easy homemade version brings all the nostalgia and flavor right to your kitchen.

Made with a buttery crust, juicy fresh strawberries, and a glossy glaze, this pie is the ultimate spring and summer dessert. Topped with a generous swirl of whipped cream, it’s every bit as good as the original!


Ingredients

For the Pie Crust:

  • 1 cup all-purpose flour
  • 4 ounces (1 stick) butter, softened
  • 3 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

For the Strawberry Filling:

  • 1 cup water
  • 3/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 2 tablespoons cornstarch
  • 1/4 teaspoon red food coloring
  • 1 quart fresh strawberries, rinsed, stemmed, and patted dry

For Serving:

  • 1 pint whipped cream or whipped topping

How to Make Big Boy’s Strawberry Pie

Step 1: Make the Crust

Preheat your oven to 350°F. In a medium bowl, mix together the flour, butter, powdered sugar, and vanilla until well combined. Press the dough evenly into the bottom and up the sides of a 9-inch pie pan. Use a fork to prick the crust all over.

Bake the crust for 10–15 minutes, or until lightly golden. Remove from the oven and let it cool completely.

Step 2: Prepare the Glaze

While the crust bakes, prepare the strawberry glaze. In a small saucepan over medium heat, combine water, granulated sugar, salt, cornstarch, and red food coloring. Stir constantly for about 5 minutes, or until the mixture thickens. Set aside to cool.

Step 3: Assemble the Pie

Once the crust is cool, pile the strawberries into the shell. Pour the cooled glaze evenly over the top, making sure it covers the berries. Refrigerate the pie until the glaze is fully set—about 2–3 hours.

Step 4: Serve and Enjoy!

Just before serving, top each slice with a generous dollop of whipped cream. This pie is best enjoyed chilled and fresh.

  • Make ahead: You can bake the crust and prepare the glaze a day in advance. Just store them separately and assemble the pie the next day.
  • Extra flavor: Add a few drops of strawberry extract to the glaze for a more intense berry flavor.
  • No food coloring? You can skip it—the pie will still taste delicious, though the glaze will be more translucent.
