Description
These are the BEST Ever Chewy Brownies—just as chewy as boxed mix brownies but loaded with rich chocolate flavor! This easy one-bowl recipe is ready in under an hour and perfect for any occasion.
Ingredients
Brownies
- 5 tablespoons (71 grams) unsalted butter
- 1 1/4 cups (249 grams) granulated sugar
- 2 large eggs + 1 egg yolk, cold
- 1 teaspoon vanilla extract
- 1/3 cup vegetable oil
- 3/4 cup (75 grams) cocoa powder (Dutch-processed preferred)*
- 1/2 cup (63 grams) all-purpose flour
- 1 tablespoon cornstarch
- 1/4 teaspoon salt
- 3/4 cup (128 grams) semisweet chocolate chips

Instructions
- Preheat & Prepare the Pan:
Preheat the oven to 325°F (163°C). Line an 8×8-inch light-colored metal pan** with foil or parchment paper and spray with nonstick cooking spray. - Melt Butter & Sugar:
In a microwave-safe bowl, combine the butter and sugar. Microwave for about 1 minute, or until the butter melts. Whisk to combine. - Add Wet Ingredients:
Whisk in the eggs, egg yolk, and vanilla extract. Stir in the vegetable oil and cocoa powder until smooth. - Incorporate Dry Ingredients:
With a rubber spatula, fold in the flour, cornstarch, and salt until just combined. Stir in the chocolate chips. - Spread & Bake:
Spread the batter evenly into the prepared pan. Bake for 30 minutes or until the brownies are set, and a toothpick inserted in the center has moist crumbs attached. Avoid overbaking. - Cool & Serve:
Allow brownies to cool completely to firm up before cutting into squares. Brownies will be gooey when warm, chewy at room temperature, and fudgy when chilled.
Storage
Store brownies in an airtight container at room temperature for up to 3 days.
