The recipe is completely vegan (dairy-free and egg-free), gluten-free, and surprisingly simple to make. For an extra indulgent touch, serve them with a drizzle of homemade caramel sauce.

Cozy & Flavorful Apple Cinnamon Crepes

One of the best parts of fall and winter baking is the incredible aroma of apples and cinnamon filling the kitchen. These apple crepes deliver exactly that warm, nostalgic scent and flavor.

They’re inspired by traditional European crepes — known as palačinky in the Czech Republic and palacinke in Croatia and other Slavic countries. This version gives them a delicious seasonal twist with a sweet apple filling.

Ingredients You’ll Need

These crepes are both vegan and gluten-free, but you can easily adapt them depending on your dietary needs.

Dry Ingredients

  • Oat flour (or finely ground oats)
  • Rice flour
  • Cornstarch (or arrowroot flour)
  • Coconut sugar, brown sugar, or cane sugar
  • Ground flax seeds (or chia seeds)
  • Baking powder

Wet Ingredients

  • Plant-based milk (lite canned coconut milk works especially well)
  • Banana (or applesauce)
  • Lemon or lime juice
  • Vanilla extract
  • Oil for frying

Apple Filling

  • Apples (peeled and chopped)
  • Coconut or brown sugar
  • Plant-based milk
  • Lemon juice
  • Cornstarch
  • Cinnamon

Optional additions: raisins, rum extract, pumpkin spice, allspice, or vanilla extract.


How to Make Apple Crepes

Step 1: Prepare the Dry Ingredients

In a large bowl, whisk together the oat flour, rice flour, cornstarch, sugar, flax seeds, and baking powder.

Step 2: Blend the Wet Ingredients

In a blender or food processor, combine the plant milk, banana, lemon juice, and vanilla extract. Blend until smooth.

Step 3: Combine

Pour the wet mixture into the dry ingredients and whisk until a smooth batter forms. Let it rest for a few minutes.

Step 4: Cook the Crepes

Heat a lightly oiled non-stick pan over medium heat. Pour about ¼ cup of batter into the pan and swirl to coat evenly. Cook for 2–4 minutes until the edges lift easily, then flip and cook another 1–2 minutes.

As the batter sits, it may thicken. Add a small splash of milk if needed.

Repeat until all batter is used.

Step 5: Make the Apple Filling

Add all filling ingredients to a saucepan and stir. Bring to a boil, then reduce heat and simmer until apples are soft and the mixture thickens.

Step 6: Assemble

Spoon a few teaspoons of apple filling onto each crepe, roll them up, and optionally sprinkle with cinnamon sugar. Drizzle with caramel sauce and serve warm.


Tips for Perfect Crepes

  • Use a non-stick pan to prevent sticking.
  • Cook over medium heat for even browning.
  • Stack cooked crepes and cover with a kitchen towel to keep them soft.
  • Use two pans at once to speed up cooking.

Storage & Reheating

Make ahead: Store crepes and filling separately in the refrigerator for up to 2 days.

To reheat: Warm each crepe in a covered pan over medium heat for 20–30 seconds to soften them again.


Simple 3-Ingredient Caramel Sauce

For a quick homemade caramel drizzle:

  • 3 tbsp coconut or brown sugar
  • 2 tbsp water
  • 2 tbsp peanut butter or sunflower seed butter

Bring sugar and water to a boil, then whisk into the nut butter until smooth.
